Pad Thai Salad

Pad Thai Salad is filled with crunchy greens and vegetables and is topped with a tangy dressing that makes your mouth sing!

The surprise ingredient in this recipe is swiss chard and let me tell you it really makes this salad a winner. Along with the crunch of the swiss chard there is carrots, red cabbage, green onions, radishes and last but not least crunchy cashews.

The dressing is a soy honey vinaigrette with a hint of sriracha, the perfect combination for this salad. It’s best to top the Pad Thai Salad with the dressing and then let it sit for 20-30 minutes so the dressing can saturate the swiss chard.

You could easily add chicken to this recipe and make it a main dish rather than a side dish.

Pad Thai Salad

Ingredients

  • 1 large bunch swiss chard
  • ½ small red cabbage
  • 4 carrots
  • 4-6 radishes
  • 3 green onions, use white & green parts
  • ½ cup fresh cilantro
  • 2 tbsp. olive oil
  • 1 tbsp. soy sauce
  • 2 tbsp. champagne vinegar
  • 1 tbsp. peanut butter
  • 1 tbsp. honey
  • 1 tbsp. water
  • Juice from ½ lime
  • ½ tsp Sriracha
  • ½ tsp fresh ginger, grated
  • ½ cup cashew pieces

Instructions

  • Thinly slice the swiss chard, cabbage, carrots, radishes and green onions. Add everything to a large bowl. Chop the cilantro and add to the bowl.
  • In a canning jar or bowl add the oil, soy sauce, vinegar, peanut butter, honey, water, lime juice, Sriracha and ginger. Shake the jar or whisk the ingredients.
  • Drizzle the dressing over the ingredients in the bowl and use a tongs to toss the dressing and salad. Dish the salad on plates and sprinkle with some of the cashews.

Buffalo Chex Mix

Buffalo Chex Mix is for the people who like a little kick in their mix!

My husband, Mr. B loves Chex Mix, pretty much anything salty and crunchy. When I asked him if he would like Buffalo Chex Mix his eyes lit up with a big YES! He is a fan of anything with buffalo sauce on it.

Mr. B’s mother, Lorna is the master at the Original Chex Mix.  There is no way I could even come close to making it the way she does, so I thought it would be better to come up with a different flavor Chex Mix. Thus, Buffalo Chex Mix was born.

This recipe for Buffalo Chex Mix has the most obvious ingredients of Chex Cereal, pretzels and nuts; the not so obvious ingredient is pita chips. They add another level of crunch to the mix. Baking it at a low temperature for a long period of time gives the sauce a chance to seep into the ingredients.

Ingredients

  • 4 Cups Corn Chex
  • 3 Cups Rice Ches
  • 3 Cups Pretzels
  • 2 Cups Seal Salt Pita Chips, I used Keebler
  • 1 cup cashews
  • 1 cup pecans
  • 1 ½ sticks of butter
  • ¾ cup hot sauce, I used Frank’s
  • 1 ½ tsp. Cajun seasoning

Instructions

  • Preheat the oven to 250 degrees.
  • In a large bowl, combine the Corn Chex, Rice Chex, pretzels, pita chips, cashews and pecans. Mix to combine and set aside.
  • In a small sauce pan over medium heat, melt the butter with the hot sauce and Cajun seasoning. Whisk until butter is melted, then pour over the mix. Stir to combine.
  • Top two baking sheets with foil and spray with cooking spray. Divide the mix evenly between the two baking sheets.
  • Bake for 1 hour, stirring every 15 minutes. When done baking, let the mix set in a cool place for 30 minutes. Store in an air tight container.

Berry Salad with Honey Vinaigrette

The honey vinaigrette really compliments the feta cheese, pistachios and fresh berries in my Berry Salad with Honey Vinaigrette.

When the weather gets warmer and spring arrives I enjoy making fresh salads. This particular salad is a mixture of iceberg lettuce and mixed greens as the base and I’ve added sweet peppers, pistachios and feta cheese. 

The honey vinaigrette is a basic vinaigrette with olive oil, , champagne vinegar, Dijon mustard and I’ve added honey so you get a nice sweetness to the acidity in the salad dressing.

I’ve chosen to use blackberries in the salad as they were on special at the grocery store this week. Raspberries, strawberries or blueberries would also work well with this salad.

Yield: 4 Salads

Berry Salad with Honey Vinaigrett

Ingredients

  • For the Salad:
  • 1/2 head of Iceberg Lettuce
  • 4-6 ounces of fresh greens
  • 1 Sweet Pepper, sliced
  • 1/2 cup pistacios, chopped
  • 1/3 cup Feta Cheese, crumbled
  • 1 pint blackberries
  • For the Dressing:
  • 1 tsp. dijon mustard
  • 1/4 tsp. garlic powder
  • 3 tbsp. champagne vinegar
  • 1 tbsp. honey
  • Salt & Pepper to taste
  • 1/2 cup olive oil

Instructions

  • Wash and arrange the lettuce and fresh greens on 4 plates. Top each salad with some of the peppers, pistachios, feta cheese and blackberries.
  • Whisk together all of the dressing ingredients and pour some of the dressing over each salad.

Pistachio Cupcakes

Pistachio Cupcakes have a fluffy texture, are super moist and are frosted with a sweet Butter Cream Frosting. They remind me of pistachio ice cream, which is a favorite flavor of mine.

The addition of chopped pistachios in the cupcake mix really takes these cupcakes to a 5 Star, although the butter cream frosting does help in the rating.

These make a perfect spring treat, the green color of the cupcake and the bright colored sprinkles really scream spring and would make a fun Easter treat.  Choose your favorite sprinkle or colored sugar to top these cupcakes and if you have kids, the perfect time to ask your kids to help decorate the cupcakes.

Ingredients

  • 1 box, 16 ½ ounce, white cake mix and the ingredients needed on the box
  • 1 box, 3.4 ounce, instant pistachio pudding mix
  • ½ cup pistachios, chopped

Instructions

  • Preheat the oven to 350 degrees.
  • In a mixer, prepare the cake mix according to package directions.
  • Add to the mixer the dry pudding mix and pistachios, mix to combine being careful not to over mix.
  • Line a cupcake pan with cupcake liners. Fill each line ¾ full of batter. Bake for 18 – 20 minutes or until a toothpick comes out clean. Remove the cupcakes from the pan and let them cool on a cooling rack.
  • I decorate the cupcakes with Butter Cream Frosting.
