Pizza Fondue

April 21, 2014 by Kay 5 Comments

Hey, Hey, Hey,
I hope everyone had a wonderful Easter. I spent time with my husband, Mr. B and my three girls, Hailey, Kiley and Mackenzie.

We went to my sister’s home for Easter Dinner. Ham, Scalloped Potatoes, Corn, Rolls, a couple of salads and dessert was on the menu and it tasted fabulous. I come from a large family and everyone contributes to the meal in some way. We always have too much food, most times we have too many desserts. It’s not unusual to have 4-6 desserts to choose from at one of our gatherings. This year the menu for desserts was pretty tame, Chocolate and Strawberry Red Velvet Cupcakes, both were well liked.

Now, on to today’s recipe, Pizza Fondue. I am not quite sure why it’s called fondue, but it is a fabulous appetizer. This would be perfect for a get together or pot luck, it makes a lot and can be kept warm in a slow cooker.

Enjoy!

Pizza Fondue

Ingredients

  • 1 1/2 tbsp. olive oil
  • 1 medium onion, chopped
  • 1 lb. ground chuck
  • 2 tsp. oregano
  • 1/2 tsp. garlic powder
  • 2 (15 oz.) cans pizza sauce
  • 1 tbsp. cornstarch
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese

Instructions

  • Heat a pan over medium high heat and add the olive oil. Add the chopped onion and saute for 3 minutes, remove from pan and set aside. Add the ground chuck and cook until browned, about 8-10 minutes.
  • While the meat is cooking combine the pizza sauce and cornstarch. Add the onions and sauce mixture to the pan after the meat is browned and reduce the heat to medium. When mixture is thickened and starts to bubble, add the cheese 1 cup at a time, making sure to combine well after each addition.
  • Add the fondue to a slow cooker and serve with bread sticks or a baguette cut into large chunks.

Stuffed Peppers

April 20, 2014 by Kay 6 Comments

Stuffed Peppers are a classic recipe that starts with a filling of beef, rice and tomatoes that’s packed into a sweet bell pepper and baked until sweet, tender and flavorful.

Sweet Bell Peppers were on special at the grocery store so I thought it would be the perfect time to make and share my recipe for Stuffed Peppers. My recipe is a classic recipe, nothing fancy, just basic ingredients that are baked to become something very delicious.

Stuffed Peppers start with browning an onion and ground chuck with salt and pepper. Then you add in some tomato products; diced tomatoes and tomato paste, along with oregano and tarragon and cooked rice. This is slow cooked on the stove top for a bit, so the flavors can marry and become one.

One step that I have added to my recipe is to cook the bell peppers in the microwave before stuffing them. I like my bell pepper to have some structure to it when it comes out of the oven. I don’t want it to soften too much that it doesn’t hold its shape. By starting the process in the microwave I don’t need to cook them as long in the oven.

Enjoy!

Stuffed Peppers

Ingredients

  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 1 lb. ground chuck
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 tsp. oregano
  • 1 tsp. tarragon
  • 1 cup cooked rice
  • 4 large sweet bell peppers or 6 medium sweet bell peppers
  • Garnish with: Cheddar Cheese, Green Onions, Sour Cream

Instructions

  • Preheat the oven to 375 degrees.
  • In a large sauce pan over medium high heat add the olive oil and onion, sauté for 3-5 minutes, until translucent. Pour the onions in a dish and set aside.
  • Add the ground chuck to the sauce pan and break apart the meat with a spoon. Add the salt and pepper and continue to cook until the meat is no longer pink in the middle, approx. 8 minutes.
  • Add the onions back into the pan and add the tomatoes, paste, oregano, tarragon and cooked rice. Stir to combine, reduce the heat to medium and cook for another 10 minutes.
  • While the mixture is cooking, cut the tops off of the pepper and remove the seeds and membranes. Place the peppers in a glass dish with the cut side up. Microwave the peppers on high for 3 minutes.
  • Fill each pepper to the top with the meat mixture and place back in the glass dish. Bake uncovered for 40 minutes.
  • To serve, cut the pepper in half and top with cheese, green onions and sour cream if desired.

Notes

You could easily substitute ground turkey for the ground chuck.

Kielbasa Pasta

April 18, 2014 by Kay 2 Comments

Kielbasa Pasta is not an ordinary pasta dish, it’s made with a spicy kielbasa to kick it up a notch.

Kielbasa Pasta starts with frying the kielbasa and onion in in olive oil. You want the kielbasa to get crisp and brown, it really makes a difference in this recipe.

While the kielbasa is frying you can boil the pasta. I used penne rigate for this dish. I used a home made canned pasta sauce I canned last summer. You can easily use a jar of your favorite pasta sauce. Once you have mixed everything together, serve it up and top with mozzarella cheese. Pasta always tastes better when topped with cheese!

This is a perfect week night meal, it comes together quickly and is super delicious.

Enjoy!

Beefy Nacho Casserole

April 16, 2014 by Kay 2 Comments

Beefy Nacho Casserole combines the great flavors of Mexican Cuisine along with tortilla chips, beef and cheese.

I am a huge fan of Mexican Cuisine, a huge, huge fan so I am always looking for new recipes to add to my collection. I also love casserole’s because they offer layers and layers of comfort.

Beefy Nacho Casserole starts with crushed tortilla chips soaked in butter for the “crust”. Next comes a layer of beef, onions, peppers and salsa. Of course you can’t have a casserole without cheese and this recipe features cheddar and pepper jack cheese.  This is all baked to marry the flavors.

Serve this with sour cream, fresh tomatoes, fresh cilantro or black olives.

Enjoy!
