Spicy Beef Tips

Spicy Beef Tips are seriously tender pieces of beef sauteed and then slow cooked on the stove top in a spicy gravy.

Two things about this recipe, 1; the beef is extremely tender and 2; when I say spicy, don’t be turned off by this, you can make this a little bit spicy or you can kick it up a notch, it’s totally your call.

I will say I used 3 tbsp. of chipotle sauce and I didn’t consider the dish to be too spicy, just a little bit of heat that really added to the flavor of the dish.

I served this over my Creamy Mashed Potatoes and I think it’s the perfect side dish for the Spicy Beef Tips. If you are looking for a comforting dish, this is it.

If you are looking to entertain and need a recipe that feeds a lot, Spicy Beef Tips is a perfect recipe. Add some crusty bread and you have a full meal that everyone will love.

Spicy Beef Tips

Ingredients

  • 2 Tbsp. olive oil
  • 1 Tbsp. butter
  • 2 – 2 ½ lbs. stew meat or chuck roast cut in chunks
  • 3 tbsp. chipotle sauce
  • 4 cups low sodium beef broth, more if needed, see notes below
  • 5 cloves garlic, chopped
  • 4 medium onions, sliced
  • 2 tsp. cumin
  • 1 tsp. chili powder
  • 3 tbsp. cornstarch
  • ½ cup water

Instructions

  • To make the meat, heat the oil and butter in a large pot over medium high heat. Throw in stew meat and brown meat on each side, about 3-4 minutes. You will need to do this in two batches, so not to crowd the meat. Set meat aside.
  • Add the sliced onions and garlic in the bottom of the pot and add the meat on top of it.
  • In a bowl, add the beef broth, chipotle sauce, cumin and chili powder, whisk to combine and pour over the meat. Stir, then bring to a boil.
  • Reduce the heat to low, then cover and simmer for 2 1/2 to 3 hours, or until the meat is fall-apart tender.
  • When meat is tender, mix together the cornstarch and water, add to the pot and stir to combine. Cook until sauce becomes thick, about 5 minutes, and you are ready to serve.
  • I recommend serving this on top of my recipe for Creamy Mashed Potatoes.

Notes

If you would like this dish to be less spicy or more spicy you can adjust the amount of chipotle sauce that is added to the dish.

Hoisin Noodles with Vegetables

Hoisin Noodles with Vegetables is a meat free entree but it’s packed full of deliciousness! Hoisin is an Asian BBQ sauce and it’s used in the sauce for this dish along with other fresh ingredients including lime juice, ginger and garlic.

The vegetables I used in Hoisin Noodles with Vegetables are broccoli, carrots, cabbage and green onions, they work well with the noodles and peanuts in this recipe. I like the addition of the peanuts, add a nice crunch to this dish.

I could eat dishes like this almost every night of the week. Stir Fry’s rank high on my list of my favorite meals. You could easily add chicken, pork or shrimp to this recipe.

Hoisin Noodles with Vegetables

Ingredients

  • 1/2 cup low-sodium soy sauce
  • ¼ cup water
  • 1 tablespoons sesame oil
  • 2 tablespoons vegetable oil, divided
  • 2 tablespoons honey
  • 3 tablespoons rice vinegar
  • 2 tablespoon fresh lime juice
  • 3 cloves garlic, finely minced
  • 1/2 tablespoon freshly grated ginger
  • 1/4 cup hoisin sauce
  • 3 tablespoons peanut butter
  • 12 ounces thin spaghetti
  • Cabbage, shredded
  • Carrots, shredded
  • Green onions, diced
  • Broccoli, chopped
  • Peanuts

Instructions

  • Prepare the noodles according to package directions.
  • For the sauce, whisk together the soy sauce, water, sesame oil, 1 tbsp. vegetable oil, honey, vinegar, lime juice, garlic, ginger, hoisin and peanut butter. Set aside.
  • Heat a large, nonstick skillet over medium high heat. Add 1 tablespoon vegetable oil, add the cabbage, carrots, green onions and broccoli and sauté for 5 minutes. Add half of the sauce. Cook for another 3-5 minutes.
  • Drain the noodles and add them back to the pan. Add the other half of the sauce and use a tongs to combine. Add the vegetable mixture to the pan, combine. Serve and top with peanuts.

Feta Pepper Bruschetta

Feta Pepper Bruschetta is a nice spin on bruschetta with not your typical ingredients. This bruschetta has feta, pepper, tomatoes, garlic and shallots.

I have been craving some fresh vegetables lately and my first thought was to make bruschetta. I am a bruschetta fanatic and Feta Pepper Bruschetta really satisfied my craving.

I like the taste of the sharp feta against the sweetness of the pepper and tomatoes. I served this on a crusty, hearty semolina bread, the more crust and the more hearty the better in my opinion.

This topping would also be perfect on top of a grilled chicken breast if you want to turn this recipe into a meal.

Feta Pepper Bruschetta

Ingredients

  • 1 red bell pepper, chopped
  • 1 - 8 to 10 ounce pkg. of cherry tomatoes, halved
  • 1 clove garlic, minced
  • 1 large shallot, minced
  • Salt & Pepper
  • 1 tsp. lemon juice
  • 1 tbsp. olive oil
  • 1/3 cup feta, crumbled
  • Crusty Bread

Instructions

  • Add the pepper, tomatoes, garlic, shallot in a bowl, mix together. Sprinkle with salt and pepper and stir. Add in the lemon juice and olive oil, mix to combine. Let sit for 15-20 minutes so the flavors can combine. Add in the feta, stir to combine and serve on crusty bread.

Flavored Butters

I am a big fan of flavored butters. Slap some butter in a bowl and add in your favorite flavors and it can bring a dish to life. My favorite way to use a flavored butter is on a steak but they work well on chicken, fish, breads and vegetables to name a few.

Here is a list of some different variations of flavored butters:

Garlic Butter

  • 1/2 cup butter
  • 4 cloves peeled garlic, minced fine
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh lemon juice (optional)
  • Salt to taste

Horseradish Butter

  • 3/4 cup butter
  • 2 tablespoons of bottled horseradish, drained
  • 2 tablespoons minced fresh chives (optional)

Italian Herbs Butter

  • 1/2 cup butter
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh oregano
  • 1 tsp. garlic salt

Smoky Tomato Butter

  • 1/3 cup unsalted butter, softened
  • 1/2 teaspoon tomato paste
  • 1/4 teaspoon smoked paprika
  • Sea salt and freshly ground pepper to taste

Blue Cheese Butter

  • ¼ cup butter or margarine, softened
  • ¼ cup crumbled blue cheese (1 oz.)
  • 2 tsp. chopped fresh chives, optional
