Pistachio Cupcakes

Pistachio Cupcakes have a fluffy texture, are super moist and are frosted with a sweet Butter Cream Frosting. They remind me of pistachio ice cream, which is a favorite flavor of mine.

The addition of chopped pistachios in the cupcake mix really takes these cupcakes to a 5 Star, although the butter cream frosting does help in the rating.

These make a perfect spring treat, the green color of the cupcake and the bright colored sprinkles really scream spring and would make a fun Easter treat.  Choose your favorite sprinkle or colored sugar to top these cupcakes and if you have kids, the perfect time to ask your kids to help decorate the cupcakes.

Pistachio Cupcakes

Ingredients

  • 1 box, 16 ½ ounce, white cake mix and the ingredients needed on the box
  • 1 box, 3.4 ounce, instant pistachio pudding mix
  • ½ cup pistachios, chopped

Instructions

  • Preheat the oven to 350 degrees.
  • In a mixer, prepare the cake mix according to package directions.
  • Add to the mixer the dry pudding mix and pistachios, mix to combine being careful not to over mix.
  • Line a cupcake pan with cupcake liners. Fill each line ¾ full of batter. Bake for 18 – 20 minutes or until a toothpick comes out clean. Remove the cupcakes from the pan and let them cool on a cooling rack.
  • I decorate the cupcakes with Butter Cream Frosting.

Candy Bar Salad

Candy Bar Salad is a creamy mixture of apples, Snickers, whipped topping, pudding…..need I go on? Can you really call it a salad if it has candy in it? I love the texture of the apples and snickers against the creaminess of the whipped topping/pudding mixture, they all blend well in this recipe.

I used Snickers in this recipe, but feel free to use Take 5, 3 Muskateers or Pay Day. Jonagold was my apple of choice for this recipe, but any crisp, tart apple would work. The ingredient that takes this salad over the top is definitely the caramel sauce that you drizzle over the top. It’s like eating a caramel apple pie with whipped topping on it but you don’t spend as much time making this recipe as you would a pie.

Keep this recipe in mind for a family get together, a pot luck or a quick week day dessert recipe.

Candy Bar Salad

Ingredients

  • 15 Fun Size Candy Bars, I used Snickers
  • 4 apples, I used Jonagold
  • 2 – 3.4 ounce pkgs. Instant Vanilla Pudding , dry
  • ¾ cup milk
  • 1 (16 oz.) tub cool whip thawed to room temp
  • Caramel Sauce to drizzle

Instructions

  • Cut the candy bars in half, then cut them in thirds. Set aside.
  • Core the apple, then cut the apples in chunks, leave the skin on the apples. Set aside.
  • In a large bowl, add the pudding mix and whisk in the milk, combine well. Whisk in the cool whip. Stir chopped apples and Snickers into pudding mixture. Cover the bowl with saran wrap and refrigerate for one hour. Just before serving, drizzle some caramel sauce of the salad.
