Individual Cheesecakes

It’s Friday everyone, my favorite day of the week. I am going to feature a couple of dessert recipes over the next couple of weeks since Valentine’s Day is not to far away and what better way to tell the one’s you love than with a special dessert. My first post will be for Individual Cheesecakes.

This recipe for Individual Cheesecake’s is very simple but it looks like you put a lot of time and effort into the dessert. It has a graham cracker crust with a light and fluffy middle and I added cherry pie filling to top off this delicious dessert. You can pick the topping of your choice; caramel, chocolate, blueberry, lots of choices just pick your favorite.

You add melted butter to graham cracker crumbs and press them into cupcake liners, then you add some of the cheesecake mixture and bake. While baking the cheesecake rises above the liners but once you take them out to cool, the Individual Cheesecake’s flatten and become this dense cheesecake that is out of this world good.

Add your favorite topping (Cherry is by far my favorite) and you have the perfect little dessert. You won’t be able to eat just one, you will want many more, so try and contain yourself when eating these Individual Cheesecakes. Make some for the one’s you love!

Individual Cheesecakes

Ingredients

  • FOR THE CRUST:
  • 1 ½ cup graham cracker crumbs
  • 4 tablespoons unsalted butter; melted
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons cinnamon
  • FOR THE FILLING:
  • 3 (8 ounce) bricks of cream cheese; softened
  • 3/4 cup sugar
  • ¼ teaspoon salt
  • 1 vanilla bean or 2 tsp. vanilla
  • 3 large eggs, at room temperature
  • 1/3 cup heavy cream
  • Cherry Pie Filling or topping of your choice

Instructions

  • Preheat the oven to 350 degrees F. Line 2 cupcake pans with 24 paper liners.
  • In a small bowl, combine the graham cracker crumbs, melted butter, sugar and cinnamon. Stir together with a fork until well blended and all dry ingredients are moistened and look like wet sand. Press 1 tablespoon of the mixture into the bottom of each cupcake liner. Bake until just set, about 5 minutes. Transfer to a cooling rack. Reduce oven temperature to 300 degrees F.
  • In a medium bowl beat the cream cheese on medium-high speed with an electric mixer just until smooth. Beat in sugar until well incorporated. Mix in the salt and vanilla. Beat in the eggs one at a time, mixing well after each addition, add in the heavy cream. Be careful not to over-mix.
  • Spoon 3 to 4 tablespoons of the cheesecake batter over the crust in each cupcake liner using an ice cream scoop or two spoons.
  • Bake until the filling is just set, about 20 to 25 minutes. Transfer to a wire cooling rack and let cool to room temperature. Transfer to the refrigerator and let chill for at least 4 hours before topping and serving, preferably overnight.

Oreo’s Dipped in Chocolate

I made it to Day 12! Thank you for coming along on my journey of treats for Christmas. I have had a lot of fun putting these recipes together for you. My family have been greatly supportive on my new journey down blog land and I can’t thank them enough. Twelve days of cookies and treats, luckily I haven’t eaten all the treats I’ve made 🙂

Today I made Oreo’s dipped in white chocolate. These treats only have 4 ingredients and are super easy to make. Step 1, melt chocolate; Step 2, dip cookies; Step 3, add sprinkles; Step 4, done! Enjoy!

Ingredients

  • 1 package Oreo's
  • 1 lb. Almond Bark (White Chocolate)
  • 1 tbsp. coconut oil or vegetable shortning
  • Sprinkles/Cookie Decorations

Instructions

  • Melt the almond bark and coconut oil over low heat. Add one oreo at a time to the sauce pan and cover the oreo with chocolate. Place the oreo on a baking sheet lined with parchmant paper or wax paper.After you dip 6 oreo's sprinkle with your cookie decorations. Let rest until the chocolate hardens.

Strawberry Snowball Cookies

We are headed into the home stretch with my Twelve Days of Christmas Treats, also into the home stretch of Christmas. It’s hard to believe Christmas is only 5 days away. How are you coming along with your holiday preparations? Christmas cards, treats, gifts, decorating; are you ready for Christmas? I have all of my gifts bought, my decorating consists of a tree with lights, unfortunately no Christmas cards this year, I have been busy getting everything set for my blog that some of my holiday preparations had to get missed this year, except the Christmas Treats!

Today’s feature is Strawberry Snowball Cookies. This recipe only has 4 ingredients, very simple recipe. The dough will be very sticky, so it’s best to drop the cookies by spoonfuls into the powdered sugar. Once they are covered in powdered sugar, they are easier to handle. The strawberry flavor comes shining through in these cookies, if you love strawberries, you will love these cookies.

Ingredients

  • 1 box Strawberry Cake Mix
  • 1 Container (8 oz.) Cool Whip, thawed
  • 1 Egg
  • Powdered Sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, add the cake mix, cool whip and egg. Beat until combined. The batter will be very sticky.
  • Drop the dough by tablespoon into a dish filled with powdered sugar. Toss to combine and place on a baking sheet. Bake 10-12 minutes.

Chocolate Dipped Cookies

We are into double digits here at Love Food, Will Share, the day’s having been passing by so quickly. I am having such a great time introducing these recipes to you. Day 10 of the Twelve Days of Christmas Treats features Chocolate Dipped Cookies. These cookies are mixed full of cocoa powder, they are not overly sweet but have a nice mixture of dark chocolate in the cookie and a creamy balance from the white chocolate they are dipped in.

These cookies by far have the most steps in the recipe, but not to worry, I have included a lot of photos to give you step-by-step instructions. You also need to plan ahead if you are  making these cookies, as they need to be refrigerated for 2 hours after you mix them. By refrigerating them the dough hardens and it’s easier to slice them before they bake. Enjoy!

Chocolate Dipped Cookies

Yield: 36

Chocolate Dipped Cookies

Ingredients

  • 2 sticks Salted Butter, Slightly Softened
  • 1 cup Powdered (Confectioners) Sugar
  • 1 whole Egg
  • 2 teaspoons Vanilla
  • 2-1/2 cups Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Salt
  • 6-8 ounces melting chocolate (I used green wafers but white almond bark works well also)
  • Red Sprinkles or other cookie decorations

Instructions

  • Cream softened butter with powdered sugar. Add egg and vanilla and mix to combine. Add dry ingredients and mix together until dough comes together. Divide the dough in two, roll each piece of dough be approx. 12 inches long and 3 inches in diameter. Wrap each piece in plastic wrap and refrigerate for 2 hours.
  • After 2 hours, remove from fridge and let the dough rest for 30 minutes. Preheat oven to 375 degrees.
  • Unwrap the dough and cut cookies to be about ¼ inch thick. Place the cookies on a baking sheet about 2 inches apart. Bake the cookies for approx. 8 – 10 minutes, being careful not to burn. Cookies will remain the same general size and shape after they bake. Remove from oven and place cookies on a cooling rack. Allow them to cool completely.
  • Melt your chocolate in a small saucepan on low heat until melted. Dip the end of each cookie in the melted chocolate and place on a baking sheet lined with a baking sheet, waxed paper or parchment paper. Sprinkle the cookies with red sugar. Let the cookies set in the refrigerator.
