1 Pan Meal Cheeseburger Macaroni is a quick dinner option made in one pan and is packed full of pasta, beef and cheese.

What can I say about this recipe for One Pan Cheeseburger Macaroni? Super easy, super delicious, super cheesy…..are you seeing a trend here? It’s a super recipe! This is a recipe that will be liked by kids and adults, both will be asking for seconds.

If you are familiar with Hamburger Helper Cheeseburger Macaroni, my recipe for One Pan Cheeseburger Macaroni is similar to this but much better for you. There is a lot less salt and no additives in my recipe and I promise, my recipe will taste better.

Serve One Pan Cheeseburger Macaroni with a side salad or fruit salad and dinner is complete.

One Pan Cheeseburger Macaroni – A Blast from the Past!

One Pan Cheeseburger Macaroni – A Blast from the Past!

Ingredients

  • 1 tbsp. Vegetable Oil
  • 1 Medium Onion, Chopped
  • 1 tbsp. Chili Powder
  • 1 tbsp. Cumin
  • 1 tsp. Salt, divided
  • 2 tsp. garlic powder
  • 1 tbsp. brown sugar
  • 1 lb. ground chuck
  • 2 cups water
  • 1 can - 15 ounces tomato sauce
  • 2 cups elbow macaroni, uncooked
  • 1 cup cheddar cheese, shredded
  • 1 cup mexican blend cheese, shredded

Instructions

  • In a large nonstick skillet, add oil and heat. Add onion, chili powder, cumin, 1/2 teaspoon salt, garlic powder and brown sugar. Cook over medium heat until onion is soft, stirring often so spices don't burn, about 5-7 minutes. Add the ground chuck and brown lightly, breaking it apart with a wooden spoon as it cooks, until there is no more pink in the meat.
  • Add the water, 3/4 teaspoon salt and tomato sauce to the skillet and stir to mix. Stir in the pasta and cover, increasing the heat to medium high. Cook the mixture, stirring often and adjusting the heat to maintain a vigorous simmer. Continue to cook until the pasta is tender, about 9-12 minutes.
  • Take the skillet off the heat and add 1 cup of the cheese mixture. Top the skillet with remaining cheese and rest the mixture off heat a few minutes or until cheese melts.

Notes

If you want to cut back on fat and calories, only use 1 cup of cheese in the recipe.

Baked Spaghetti

Baked Spaghetti takes a classic dish and turns it into a comforting casserole that is perfect for a weeknight meal, a pot luck or a family gathering.

This recipe reminds me of my Grandma Mary, my Mom’s mom. When I was a kid my grandma would celebrate Grandkid’s Day and we would go to her house and she would make food that the Grandkids loved. One of those recipe’s was Baked Spaghetti. In fact, this is one of the few recipe’s I remember her making besides desserts. My grandma was a huge lover of desserts. So, Grandma Mary, this recipe for Baked Spaghetti, is for you.

What I love most about this recipe is the fact it takes the ingredients of spaghetti and lasagna and combines them into one casserole. Baked Spaghetti starts with spaghetti noodles that are bathed in a mixture of butter, eggs and parmesan cheese and topped with a layer of ricotta cheese. Throw in a layer of beef & spaghetti sauce and you have the start of a tasty casserole. Finish it off with another layer of noodles, some more beef & spaghetti sauce and top if off with a bunch of fresh cheese. Bake it until golden brown and dig into this delicious dish.

Baked Spaghetti

Baked Spaghetti

Ingredients

  • 1 lb. spaghetti noodles
  • 1 1/2 lbs. ground chuck
  • 1 medium onion, diced
  • 1 jar (32 oz.) spaghetti sauce
  • 1 can (15 oz.) tomato sauce
  • 1/2 tsp. salt
  • 1 tsp. basil
  • 1/2 tsp. oregano
  • 2 tsp. brown sugar
  • 1/3 cup grated parmesan cheese
  • 2 eggs
  • 4 Tbsp. butter, melted
  • 1 container (15 oz.) ricotta cheese
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 cup sharp cheddar cheese, shredded

Instructions

  • Preheat your oven to 350 degrees. Grease a 9 x 13 pan and set aside.
  • Cook the spaghetti according to package directions until al dente.
  • In a large sauce pan, brown the ground chuck and onion over medium high heat until the meat is cooked through. Drain off the fat. Stir in the spaghetti sauce, tomato sauce, salt, basil, oregano and brown sugar. Turn off the heat and set aside.
  • In a large bowl, mix together the eggs, butter and parmesan cheese. Once the noodles are cooked, drain and add the noodles to this mixture and stir to combine.
  • Place half of noodles in bottom of baking dish. Spread the ricotta cheese on top of the noodles.
  • Top that with half of the meat sauce. Place the remaining noodles on top.
  • Top with remaining meat sauce.Top with the mozzarella and the cheddar cheese.
  • Cover with foil and bake for 35 minutes. Remove foil and continue to bake until cheese is melted and golden brown. About 20 minutes

Beef & Chorizo Quesadilla

Beef & Chorizo Quesadilla’s is a quick snack or dinner option if you are short on time. The meat mixture along with cheddar & queso fresco cheese are layered between two flour tortillas and fried until the tortilla is golden brown and the cheese has melted and is oozing out the sides.

Are you familiar with chorizo sausage? It’s a variety of heavily seasoned sausage, either cured or fresh, that is common in Spanish and Mexican cuisine. It has a little kick to it, but not too much. I like to mix chorizo with beef when I make Mexican dishes as fresh chorizo can be very greasy and adding it to beef cuts back on the grease and calories. 

Top the Beef & Chorizo Quesadilla with your favorite toppings: sour cream, salsa, green onions, more cheese, avocado, fresh tomatoes, lettuce, etc. I went with sour cream, salsa and green onions for my toppings.

Serve this up with your favorite Mexican beer, Sangria or a Margarita!

Ingredients

  • 1 lb. ground chuck
  • 1/2 lb. chorizo sausage
  • Flour tortillas
  • Cheddar Cheese
  • Queso Fresco Cheese
  • Green Onions

Instructions

  • In a sauce pan over medium high heat, add the ground beef and chorizo. Cook the meat for 8-10 minutes, until the meat is cooked through about 8-10 minutes. Drain the grease off of the meat.
  • Turn your griddle on medium high (you can also fry this in a frying pan). Place a tortilla on the griddle, Add some cheddar cheese to the top of the tortilla, add some of the meat mixture and top with more cheddar and queso fresco cheese and lastly top with green onions. Top with another tortilla. Close the griddle and cook until the cheese oozes out the side. Place the quesadilla on a plate and cut into fourths. Top with your favorite toppings.

Loaded Nachos

Loaded Nachos piles layers of crispy chips, seasoned beef, vegetables and lots of cheese to give you a total comfort food.

Nachos are an all time favorite of mine. After I posted my recipe for Homemade Taco Seasoning, I new I needed to come up with a recipe for nachos and Loaded Nachos is where I ended up. And it definitely was the perfect place to end.

I double layer everything in this recipe, so be prepared for a lot of Loaded Nachos. This would be a great recipe to make for a party or BBQ.  Serve the nachos with salsa, sour cream and wedges of lime. A squeeze of fresh lime juice really gives the nachos a nice punch.  You could easily skip the meat and serve this as a vegetarian Loaded Nachos.

Ingredients

  • 1 bag tortilla chips
  • 1 lb. ground chuck
  • 2 tbsp. taco seasoning (try my homemade taco seasoning)
  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 can black beans, rinsed and drained
  • 2 cups shredded Monterey Jack Cheese
  • 2 cups shredded Pepper Jack Cheese
  • Fresh lime wedges
  • Salsa
  • Sour Cream
  • Green Onions, diced

Instructions

  • Preheat your oven to 350 degrees.
  • Heat a sauce pan on medium high heat. Add the ground chuck and cook until cook through, about 8 minutes. Drain the excess fat from the pan and stir in the taco seasoning. Set the ground chuck aside on a plate.
  • In the same pan, add the olive oil, onion and peppers. Saute for approx. 5 minutes, until the onions and peppers start to soften.
  • On a large baking sheet spread 1/2 of the bag of tortilla chips. Pile on half of the ground chuck, onions, peppers, black beans and cheese.
  • Pile the rest of the tortilla chips on top of the first layer. Then pile on the rest of the onions, peppers, black beans and cheese.
  • Bake in the oven until the cheese is melted, about 10-12 minutes.
