Key Lime Pie

For a real treat and a taste of the south, make my recipe for Key Lime Pie which offers a smooth tart filling with a sweet graham cracker crust.

We recently were on vacation in Williamsburg, Virginia and in the process of doing some research of the area I came across Jamestown Pie Company. When we arrived in Williamsburg we stopped and picked up a Key Lime Pie and a Blackberry Peach Pie from the pie company to enjoy the week we were on vacation. There were four of us on vacation and we all were in love with these pies.

My husband Bill is a huge fan of Key Lime Pie. After getting back from vacation I thought I would give Key Lime Pie a try. You start with mixing together graham cracker crumbs, sugar, cinnamon and butter and “ta-ah”, you have a crust. Then you whisk together sweetened condensed milk, egg yolks, key lime juice and “ta-da” you have the filling. Sounds pretty easy, right? Well, I am here to tell you, it is easy.

I added some whipped topping to make it look pretty and add a little more sweetness to the Key Lime Pie. My husband gave a thumbs up to this pie and said it was as good as the pie from Jamestown Pie Company.

Key Lime Pie

Key Lime Pie

Ingredients

  • 1 1/4 cups finely-ground graham cracker crumbs
  • 2 Tbsp. sugar
  • 1/4 tsp. ground cinnamon
  • 5 Tbsp. butter, melted
  • 1 (14-ounce) can sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup key lime juice*
  • Whipped topping, optional

Instructions

  • Preheat your oven to 350 degrees.
  • Stir together graham cracker crumbs, sugar, cinnamon and butter in 9-inch pie plate and stir to combine. Press mixture evenly onto bottom and up side of the pie plate. Bake crust on the middle oven shelf for 10 minutes, then remove and cool for 5 minutes.
  • While the crust is baking, whisk together the condensed milk and egg yolks in a bowl until combined. Add juice and whisk by hand for 1 minute until combined and slightly thickened.
  • Add the filling to the crust and bake on the middle oven shelf for 15 minutes. Transfer pie to a cooling rack, and let sit until it reaches room temperature. Then refrigerate for at least 3 hours, or until chilled and set.
  • Top with whipped topping, if desired.
  • *I used bottled key lime juice. If you have access to fresh key limes, I suggest using fresh juice for this recipe.

Cookie Dough Truffles

This No bake Cookie Dough Truffles recipe is filled with chocolate chip cookie dough and dipped in chocolate. The perfect treat for your sweetheart!

Who doesn’t love to eat chocolate chip cookie dough before the cookies are baked? I know I do. If you do also, you will love Cookie Dough Truffles! The added bonus is the cookie dough is dipped in chocolate, so you get a double dose of chocolate in this special treat.

With Valentine’s Day around the corner I wanted to post a treat that was simple enough for everyone to make for their sweetheart. I don’t know too many people that don’t like Chocolate Chip Cookies, so I think Cookie Dough Truffles would be a safe bet to make for someone special in your life.

I dipped Cookie Dough Truffles in Red Chocolate and Dark Chocolate and added red, pink and white sprinkles and red hots for added color and flair.

Who ever that special someone is in your life this Valentine’s Day, be it your husband/wife, boyfriend/girlfriend, son/daughter, etc., I hope your day is special.

Cookie Dough Truffles

Cookie Dough Truffles

Ingredients

  • 1 cup flour
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • 1 stick butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tsp. vanilla
  • 1/2 cup mini semi-sweet chocolate chips
  • 1 tbsp. water, if needed
  • Chocolate for melting
  • Sprinkles for decorating

Instructions

  • In a bowl whisk together the flour, salt, and cinnamon; set aside.
  • In a separate bowl, with a hand mixer, beat together the butter, sugar, brown sugar, and vanilla until combined. Slowly beat in the flour mixture until smooth. If the mixture seems dry, add in the water and mix together.
  • Stir in the chocolate chips. Roll the mixture into quarter size balls and lay on cookie sheet lined with wax paper. You should get approx. 20-24 balls. Chill in the freezer for 15 minutes or until firm.
  • Melt the chocolate in the microwave per directions on package (30 sec intervals, stirring in between). Gently dip the cookie dough ball into the candy coating. Once covered remove and let the excess chocolate fall off. Place back on wax paper. Top with sprinkles if you desire. Let the truffles rest so the chocolate can dry.

Sprinkle Cake Batter Cookies

Sprinkle Cake Batter Cookies are super cute cookies that utilizes a cake mix as the base and is an easy way to save time in the kitchen while coming up with a quick dessert at the same time!

Sprinkle Cake Batter Cookies literally only has SIX ingredients in the recipe, that’s right, only six ingredients….a cake mix, baking powder, oil, eggs, vanilla and sprinkles….that’s it! These come together quickly and bake super quick.

I chose to post these at Christmas time because I know a lot of people struggle to find time to get everything done for the holidays. So, if you need a quick treat for a get together, your child’s school treat, cookie’s for Santa or you want to bake cookie’s with your kids, here is a quick and easy recipe for you to try.

Sprinkle Cake Batter Cookies

Sprinkle Cake Batter Cookies

Ingredients

  • 1 box white cake mix
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/2 tsp. vanilla
  • ½ cup red/green nonpareil sprinkles (or colored sprinkles of your choice)

Instructions

  • Preheat your oven to 350 degrees. Line large baking sheet with parchment paper or silicone baking mats and set aside.
  • In a large bowl, whisk or sift together the cake mix and baking powder and set aside. In your mixer, mix together the eggs, oil, and vanilla. Add the cake mixture and form a dough- mix vigorously until all of the pockets of dry cake mix are gone. By hand, gently mix in the sprinkles - you do not want the color of the sprinkles to color the cookie dough by over mixing.
  • Form rounded 1-inch balls of dough and place on the cookie sheets. Bake for 9 minutes, do not overbake and let the cookies get brown. Allow to cool on baking sheet for 1 minute and transfer to a wire rack to cool completely. Store in an airtight container, for up to one week or store in a freezer for the holiday season.

Pumpkin Cream Cheese Dump Cake

Hello Everyone,

I am back! I know it has been awhile since I have posted and I am sorry about that. Thank you for your patience while I have been absent.

I am back with a delicious pumpkin dessert, Pumpkin Cream Cheese Dump Cake. This dessert reminds me of my favorite beverage this time of year, the Pumpkin Spice Latte from Starbucks.

It comes together quickly and is sure to satisfy your craving for pumpkin this time of year. The base is a can of pumpkin, evaporated milk, eggs, sugar and pumpkin pie spice. To the top of that you pipe a mixture of cream cheese and powdered sugar. Then comes the dumping part, a dry cake mix is dumped on top and drizzled with melted butter.

Keep this recipe in mind for any desserts you need to make this fall, especially for Thanksgiving.

Pumpkin Cream Cheese Dump Cake

Pumpkin Cream Cheese Dump Cake

Ingredients

  • 8 oz. cream cheese
  • 3/4 cup powdered sugar
  • 2 tsp. milk
  • 1 can (29 oz.) pumpkin puree
  • 1 can (12 oz.) evaporated milk
  • 3 eggs
  • 1 1/4 cup sugar
  • 1 tsp. salt
  • 1 tbsp. pumpkin pie spice
  • 1 white or yellow cake mix (dry)
  • 1/2 cup butter, melted
  • 1 Tbsp. cinnamon sugar mixture

Instructions

  • Preheat the oven to 350 degrees. Grease a 9 x 13 pan and set aside.
  • In a bowl mix together the cream cheese, powdered sugar and milk until smooth. Set aside.
  • In a large bowl mix together the pumpkin puree, evaporated milk, eggs, sugar, salt, and pumpkin pie spice. Pour into the pan.
  • Add the cream cheese mixture to a ziploc bag. Cut off the tip of the bag to make a mini piping bag. Pipe the cream cheese mixture over the pumpkin filling, take a look at the photo below.
  • Pour the dry cake mix evenly over the cream cheese layer. Pour the melted butter evenly over the cake mix. Sprinkle the cinnamon sugar over the top of the cake.
  • Bake for 50-60 minutes or until the top is browned and an instead knife comes out clean.
  • Let cool and serve, store in the fridge.
