Apple Pie Bread

Apple Pie Bread is an easy to make quick bread with apple pie filling mixed into the brown sugar batter. Serve warm with a side of vanilla ice cream!

Fall is just around the corner and fall reminds me of apples, pumpkins, comforting soups, the leaves falling to the ground and wonderful brisk fall weather days.  I do want summer weather to last a little while longer but I don’t mind when the fall weather appears.

Apple Pie Bread whips up in a jiffy and uses apple pie filling and apple pie spice to bring home all the flavors of apple pie. The apple pie filling makes this quick bread extra moist. I love the addition of the apple pie spice, the nutmeg in the spice really stands out in this recipe.

I dusted the warm bread with powder sugar, it makes it look extra special. Apple Pie Bread is best served warm but I ate a piece this morning that wasn’t warm and it was still delicious. If serving this to guests, add a scoop of vanilla ice cream along side each slice.

Apple Pie Bread

Apple Pie Bread

Ingredients

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 2 1/2 tsp. baking powder
  • 1 tsp. apple pie spice
  • 1 can Apple Pie filling (approx. 20 ounce can)
  • Powdered Sugar

Instructions

  • Preheat the oven to 350 degrees. Grease a 9 x 5 inch bread pan. If you would like, you can line the pan with parchment paper.
  • In a large bowl, mix together the butter and powdered sugar for 2 minutes on medium speed.
  • Add in the eggs, 1 at a time and mix on medium speed until combined.
  • In a separate bowl, whisk together the flour, baking powder and apple pie spice. Mix the dry ingredients into the butter mixture until combined on medium speed.
  • Open the can of apple pie filling and add it to a bowl. With a scissors, cut the apple slices into chunks. Add the apple pie filling to the dough and using a spatula, fold until combined.
  • Spread the dough into the bread pan, even the top out with a spatula.
  • Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  • Cool on a wire rack for 15 minutes, then remove the bread from the pan and sprinkle with powdered sugar. Store in an air tight container.

Zucchini Cake with Brown Sugar Frosting

Super moist, very flavorful and extra sweet describe this cake made with fresh zucchini and no one will ever know there is a vegetable in Zucchini Cake with Brown Sugar Frosting (unless you tell them the name!).

The zucchini does really add a nice element to this cake and it’s a great way to use up any extra zucchini you might have left over from your CSA or your garden. Zucchini is also in abundance at Farmers Markets, so check there if you are in need of some for this recipe.

The key to this recipe is making sure to squeeze out some of the juice of the zucchini after you have shredded it, you don’t want the batter to be too thin.

Zucchini Cake with Brown Sugar Frosting

Ingredients

  • 3 eggs
  • 1 1/3 cups sugar
  • ½ cup vegetable oil
  • ½ cup orange juice
  • 1 tsp. vanilla
  • 2 ½ cups all-purpose flour
  • 2 tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 ½ cups shredded zucchini
  • CARAMEL FROSTING:
  • 1 cup packed brown sugar
  • ½ cup butter, 1 stick, but into small cubes
  • ¼ half & half
  • 1 tsp. vanilla
  • 1 ½ - 2 cups powdered sugar

Instructions

  • Preheat your oven to 350 degrees. Grease and flour a 9 x 13 metal baking pan.
  • In your mixer beat the eggs, sugar, oil, orange juice and vanilla.
  • In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda and salt. Slowly add the dry ingredients to the mixer and mix to combine. Add in the zucchini and mix just until combined.
  • Pour the mixture into the cake pan and use a spatula to even it out. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Let the cake cool before frosting.
  • While the cake is baking make the frosting. Add the browns sugar, butter and half & half in a small saucepan. Over medium heat, let the mixture come to a boil. Boil for 2 minutes. Remove from the heat and whisk in the vanilla. Let the mixture cool to luke warm and whisk in the powdered sugar. Start with 1 ½ cups and check the consistency, if it isn’t thick enough, add in the additional ½ cup of powdered sugar, mix to combine. Frost the cake and serve.

Fruity Marshmallow Treats

Fruity Marshmallow Treats start with two kinds of crispy cereal that is mixed in a buttery marshmallow coating.

How was your weekend? I hope you had time to enjoy it. This weekend started my canning season for the year. I am starting with my Dilly Beans. Dilly Beans are basically pickled beans. A great way to preserve the green beans from the garden. My only problem, the green beans got a wrinkly and I have no idea why. Anyone out there know the answer or have a solution for this? Any answers or solutions would be greatly appreciated.

Saturday night I sat at a Tiki Bar and enjoyed a sunset at the lake. It was so beautiful, if only I lived on a lake and could enjoy it every night.

My twist on Rice Krispie Treats is Fruity Marshmallow Treats. I love the fruit flavored cereal that is added in, it not only tastes good but it looks good as well.

Fruity Marshmallow Treats is the perfect recipe to make for a picnic, a family reunion, a bake sale, a kids (or adults) birthday party or school treat. These come together rather quickly because the marshmallow mixture is made in the microwave.

Ingredients

  • 1 - 10 ounce bag marshmallows
  • 3 tbsp. butter, softened
  • Cooking Spray
  • 4 cups krispie rice cereal
  • 2 cups fruity krispie rice cereal

Instructions

  • Spray a 9 x 13 baking dish with cooking spray, set aside.
  • In a large microwaveable bowl, add the marshmallows and butter. Microwave on high for 3 minutes. Remove the bowl from the microwave. Spray a spatula with cooking spray and stir the marshmallow mixture.
  • Add the cereal to the bowl and combine the cereal with the marshmallow mixture. Press the mixture into the prepared pan.
  • Cut the treats and eat!

Salted Chocolate Truffles

Three kinds of chocolate are the base of Salted Chocolate Truffles that are topped with Fleur de sel and Chipotle Sea Salt to push this truffle over the top.

The base of Salted Chocolate Truffles consists of five ingredients; sweetened condensed milk, vanilla, dark chocolate, semi-sweet chocolate and milk chocolate. The use of three chocolates in really adds to the richness of this candy.

Adding sea salt to the top of chocolate candy like Salted Chocolate Truffles brings the flavors alive in your mouth. If you’ve never tried the combination I suggest you do, I promise you will love it!

I used a double boiler to melt the ingredients. This is a method of adding water to a pan and bringing the water to a simmer. Once the water is simmering you place a glass bowl on top of the pan with the ingredients inside and the heat from the simmering water melts the ingredients. Here is a link on using a double boiler.

This is definitely a recipe that is simple to make but looks like you spent all day in the kitchen making them! Salted Chocolate Truffles would make a great gift for someone special.

Salted Chocolate Truffles

Ingredients

  • 1 - 14 oz. can, sweetened condensed milk
  • 8 oz. bittersweet chocolate
  • 8 oz. semisweet chocolate
  • 1 tbsp. vanilla
  • 8 oz. milk chocolate
  • Chipotle Sea Salt and/pr Fleur de sel

Instructions

  • Heat the bottom pan of the double boiler over medium heat. When it comes to a simmer, add the glass bowl to the top of the double boiler and mix in the milk, bittersweet & semi-sweet chocolate and vanilla. Reduce heat to medium low and continue to stir until the mixture has melted completely. Take the bowl off the double boiler.
  • Cover the bowl with saran wrap making sure the saran wrap fits snug against the chocolate mixture. Refrigerate until chilled, 2 hours.
  • After the chocolate mixture has chilled, roll the mixture into balls. Put the balls into the fridge for 10 minutes to let the balls set.
  • While the balls are setting, reheat the water in your double boiler. Add in the milk chocolate and stir until fully melted. Dip each truffle into the melted chocolate and remove it with a fork.Tap the fork against the bowl to get rid of any excess chocolate. Place the truffle on a waxed lined baking sheet. Set the truffles in the fridge until the chocolate hardens. Store in an air tight container, in the fridge if it's humid in your home.
