Leek Mac & Cheese

A rich and flavorful dish, Leeks Mac & Cheese combines the taste of sharp cheddar with the sweetness of leeks for a new twist on mac and cheese.

Are you familiar with leeks? They have the flavor of a mild onion. I really like leeks in this recipe, it adds a new element to the dish and compliments the sharp cheddar cheese very nicely.

If you are not familiar with cleaning leaks, here is a link,How to Clean Leeks. Dirt tends to lie in the creases and crevices, so it’s important to clean them properly before cooking with them.

I have always been a fan of Mac & Cheese and Leek Mac & Cheese has become my new favorite. As far back as I can remember, way back into my childhood, my Mom would make Mac and Cheese regularly. Any dish that combines pasta and cheese rates high on my list and I am sure you will fall in love with this dish as much as I have.

Leek Mac & Cheese

Leek Mac & Cheese

Ingredients

  • 1 lb. pasta, medium in size
  • 4 tbsp. butter, divided
  • 3 leeks, cleaned and sliced
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 3 tbsp. flour
  • 1 ½ cups half & half
  • 1 ½ cups skim milk
  • 4 tbsp. cheese powder *
  • 1 ½ cups shredded sharp cheddar cheese, divided

Instructions

  • Preheat the oven to 350°.
  • Cook pasta according to package directions
  • Melt 2 tbsp. of butter in a large sauce pan. Add the leeks and sauté for 3-5 minutes until the leeks start to brown. Set the leeks aside.
  • In the same saucepan, melt the remaining 2 tablespoons of butter. Whisk in the flour and cook for 3 minutes, making sure to whisk while it cooks.
  • Add the half & half and skim milk. Whisk the mixture until the mixture starts to boil, reduce the heat to medium and continue whisking until the mixture is thickened, about 3-5 minutes.
  • Remove the pan from the heat and whisk in the salt, pepper and cheese powder.
  • Add 1 cup of the shredded cheddar and whisk to combine.
  • Stir in the pasta and leeks. Pour the mixture into a 3 quart baking dish. Sprinkle the remaining ½ cup of cheese on the top.
  • Bake for about 30 minutes. Let sit for 10 minutes before serving.

Notes

*If you don't have cheese powder, increase the amount of cheddar cheese to 2 cups.

Fruity Marshmallow Treats

Fruity Marshmallow Treats start with two kinds of crispy cereal that is mixed in a buttery marshmallow coating.

How was your weekend? I hope you had time to enjoy it. This weekend started my canning season for the year. I am starting with my Dilly Beans. Dilly Beans are basically pickled beans. A great way to preserve the green beans from the garden. My only problem, the green beans got a wrinkly and I have no idea why. Anyone out there know the answer or have a solution for this? Any answers or solutions would be greatly appreciated.

Saturday night I sat at a Tiki Bar and enjoyed a sunset at the lake. It was so beautiful, if only I lived on a lake and could enjoy it every night.

My twist on Rice Krispie Treats is Fruity Marshmallow Treats. I love the fruit flavored cereal that is added in, it not only tastes good but it looks good as well.

Fruity Marshmallow Treats is the perfect recipe to make for a picnic, a family reunion, a bake sale, a kids (or adults) birthday party or school treat. These come together rather quickly because the marshmallow mixture is made in the microwave.

Ingredients

  • 1 - 10 ounce bag marshmallows
  • 3 tbsp. butter, softened
  • Cooking Spray
  • 4 cups krispie rice cereal
  • 2 cups fruity krispie rice cereal

Instructions

  • Spray a 9 x 13 baking dish with cooking spray, set aside.
  • In a large microwaveable bowl, add the marshmallows and butter. Microwave on high for 3 minutes. Remove the bowl from the microwave. Spray a spatula with cooking spray and stir the marshmallow mixture.
  • Add the cereal to the bowl and combine the cereal with the marshmallow mixture. Press the mixture into the prepared pan.
  • Cut the treats and eat!

Cheesy Broccoli Potato

Cheesy Broccoli Potato is packed full of nutrients, broccoli & cheese and can be eaten as a main course or a side dish.

I am a huge fan of broccoli cheese soup, but in the summer I don’t always like to eat hot soup. Cheesy Broccoli Potato is a close 2nd to broccoli cheese soup. You have the creaminess of the potato, topped with butter, broccoli and cheddar cheese. Put it in the oven until the cheese is melted and bubbly and it’s ready to eat.

When I bake potatoes I like to do a bunch at a time. Aside from eating the baked potato like in this recipe, I also like them for my lunch, to make American Fries or twice baked potato or use them a baked potato soup.

Cheesy Broccoli Potato

Ingredients

  • 2 cups broccoli, in small pieces
  • 2 Russet potatoes, baked & hot
  • 2 tbsp. butter, softened
  • 1/2 cup of cheese

Instructions

  • Place the broccoli in a microwave safe bowl. Add 2 tbsp. of water. Microwave on high for 3 minutes. Check the broccoli, if it's bright green it is done, otherwise put it back in the microwave for 1 minute.
  • Take your potatoes and cut in half the long way. Spread 1 tbsp. of butter on each potato.
  • Spoon half of the broccoli on one of the potatoes and repeat with the second.
  • Top each potato with 1/4 cup of cheese.
  • Microwave each potatoes for approx. 2 1/2 minutes, or until the cheese is melted. The time will vary depending on the wattage of your microwave.

Orange Creamsicle Popcorn

Orange Creamsicle Popcorn combines the flavors of a creamsicle, the crunch of popcorn and the gooeyness of a rice krispie treat.

As a kid, I think orange creamsicles were my favorite frozen treat. When I came across this recipe for Orange creamsicle Popcorn, I knew I would need to try it and see how close it comes to an Orange Creamsicle and I can tell you it is spot on!

I love popcorn in general, so adding ingredients to make it sweet in my eyes is genius.

Orange Creamsicle Popcorn

Orange Creamsicle Popcorn

Ingredients

  • 1 cup unpopped popcorn kernals
  • 1/2 cup butter
  • 1 can sweetened condensed milk
  • 1/4 cup half & half
  • 1 cup granulated sugar
  • 1/8 tsp salt
  • 1 Tbsp orange zest
  • 1 tsp orange extract
  • 4 cups miniature marshmallows

Instructions

  • Pop popcorn and divide evenly between two large bowls and set aside.
  • In a sauce pan, melt the butter over medium heat. Stir in the sweetened condensed milk, half & half, sugar, salt and orange zest. Bring mixture to a boil, stirring frequently. Boil mixture one and a half minutes, stirring constantly. Remove the pan from the heat.
  • Mix in the orange extract. Pour the marshmallows in the pan and stir until completely blended in.
  • Divide warm mixture evenly over two bowls of popcorn and toss with a spatula to coat. Lay to popcorn on 2 baking sheets lined with parchment paper. Allow it to rest for 30 minutes.
