Pesto Cheese Bread

Are you in need of a quick appetizer or a side to go along with your favorite Italian dinner? Pesto Cheese Bread is as delicious as it is quick.

You take a crusty loaf of Ciabatta Bread (French Bread will work too), slice it in half lengthwise.

Spread some prepared pesto on the bread and sprinkle with mozzarella cheese. You can skip the cheese if you like, I like to eat it both ways.

Ingredients

  • 1 loaf of Ciabatta Bread
  • 1/2 cup prepared Pesto
  • 1 cup Mozzarella Cheese, shredded

Instructions

  • Preheat your oven to 375 degrees. Line a baking sheet with foil.
  • Cut the loaf of bread in half lengthwise. Spread 1/4 cup of pesto on each half of the bread.
  • Sprinkle each half with 1/2 cup shredded mozzarella cheese. Place the bread on the baking sheet and bake for 15-20 minutes, until the cheese is melted and heated through.

Notes

If you want, you can skip the mozzarella cheese and just make Pesto Bread.

Stuffed Chicken Caesar Sandwich

When I came across this recipe, I knew I would need to make it, as I have a love of Caeser Salads and I was looking for a way to incorporate the ever popular pretzel buns into a recipe. This is a fast and simple recipe that packs a lot of flavor. Serve with a fresh fruit salad and you have a refreshing lunch or buy the small pretzel buns and they would be great for a pot luck get together. If you are in a hurry, you can always use store bought Caeser Dressing. Fresh parmesan cheese is really key in this recipe.

Stuffed Chicken Caesar Sandwich

Ingredients

  • 1 loaf French bread, or 6 small loaves
  • 1 large head Romaine lettuce, torn into pieces
  • 1/4 cup grated Parmesan cheese
  • 2 cups chopped skinless rotisserie chicken breast
  • 1/2 cup plain nonfat yogurt
  • 1/2 teaspoon minced garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard

Instructions

  • If using large French bread, cut into 6 sections. Hollow out the inside and discard any extra bread. Toast the hollowed out bread until light brown.
  • In bowl, combine the lettuce, cheese, and chicken.
  • In small bowl, whisk together the remaining ingredients. Toss with the chicken mixture; stuff into each hollow toasted bread section. Serve.
  • Tip: The Caesar dressing may be used on a salad.

Tomato Basil Tart

Have you ever baked or had Rhodes Rolls?  You find them in the frozen foods section at the grocery store. All you need to do is let the rolls rise and then bake them. They are soft and yummy, especially when eaten right out of the oven. This recipe from the Rhodes Rolls web site, is a delicious way to use up the Rhodes Rolls you may have in your freezer (my daughter bought the 72 roll pack and that is why I have extras to use up).

Ingredients

  • 9 Rhodes dinner rolls, thawed and risen
  • 1 1/2 cups grated fresh Parmesan cheese
  • 1 1/2 cups grated Gruyere cheese
  • 3 tablespoons chopped fresh basil
  • 3-4 medium size tomatoes, sliced
  • salt and freshly ground pepper
  • 1-2 tablespoons olive oil

Instructions

  • Spray counter lightly with non-stick cooking spray. Combine rolls into a ball and roll into a 12-inch circle. Place on a large sprayed baking sheet.
  • In a bowl, combine cheeses and basil. Spread cheese mixture evenly over dough, leaving a 2-3-inch border all around. Top with sliced tomatoes and salt and pepper.
  • Fold the 2-3-inch border of dough up over filling, pleating as you work your way around the tart. Brush crust with olive oil and secure in a few spots with toothpicks if necessary.
  • Bake at 325°F 35-40 minutes.
  • Variation: Use what ever variety of tomatoes you might have on hand. As you can see I added in some cherry tomatoes when I made this recipe.
