Lettuce

Lettuce Wraps

July 8, 2014 by Kay Leave a Comment

Lettuce Wraps are filled with ground turkey and doused in an Asian inspired sauce and tossed with water chestnuts, sweet pepper and green onions.

This recipe was inspired by my nephew Jacob. He made a similar Lettuce Wrap when we were on vacation in the Outer Banks. They were so delicious I vowed to recreate the recipe. Jacob used a bottle sauce but I decided to come up with my own sauce and I think I replicated his sauce to the tee.

Jacob used ground chicken in his version and I wanted to do the same, but the grocery store had something else in mind when I went grocery shopping, they were out of ground chicken so I opted for ground turkey. Either one will work fine in this recipe for Lettuce Wraps.

I used Butterhead lettuce for the Lettuce Wraps and topped them with green onions and cashews. I also made a Soy Ginger Sauce for dipping and recommend Sriracha for those of you who like things a bit spicy!

Enjoy!

Yield: 8 - 10 Wraps

Lettuce Wraps

Ingredients

  • 1 lb. ground turkey or ground chicken
  • 6 green onions, chopped (plus more for serving)
  • 1 small can water chestnuts, drained and chopped
  • 1 red bell pepper, chopped
  • 2 garlic scapes, chopped (optional)
  • ¼ cup hoisin sauce
  • 1 tbsp. soy sauce
  • 2 tbsp. vegetable oil
  • 1 tbsp. freshly grated ginger
  • 2 tbsp. water
  • 1 head of butterhead lettuce
  • Salted cashews
  • Dipping Sauce:
  • ¼ cup soy sauce
  • 2 tbsp. rice wine vinegar
  • 1 tbsp. sugar
  • 1 tsp. freshly grated ginger
  • 1/2 tsp. sesame oil

Instructions

  • In a large saucepan, over medium high heat brown the turkey until cooked through, about 6-8 minutes. Add in the green onions, water chestnuts, pepper and garlic scapes. Reduce the heat to medium and let cook while you mix the sauce.
  • In a bowl, whisk together the hoisin, soy sauce, oil, ginger and water. Pour over the meat mixture and stir to combine. Continue to cook until the mixture comes to a boil, then remove from the heat.
  • While the meat mixture is coming to a boil, whisk together the ingredients for the dipping sauce: soy sauce, vinegar, sugar, ginger and oil.
  • Rinse the lettuce leaves with water, pat dry with paper towel.
  • To serve; spoon some of the meat mixture onto a lettuce leave and “wrap” it together. Serve with green onions, cashews and the dipping sauce.

Chopped Salad with Strawberries

April 22, 2014 by Kay 8 Comments

Chopped Salad with Strawberries is a hearty salad filled with fresh vegetables, two kinds of lettuce, strawberries, croutons and is topped with a delicious vinaigrette.

I love salads. I especially love to order large salads when I go out to eat, so I decided I need to come up with some restaurant quality salads at home. Chopped Salad with Strawberries was a big success.

I opted for two kinds of lettuce, mixed greens and iceberg lettuce. I love the crispness of the iceberg lettuce with the mixed greens. For vegetables I used a sweet red pepper, a shallot, and a seedless cucumber. I added in fresh strawberries, feta cheese and home made croutons.

For the dressing, I made a home made herb vinaigrette and used a strawberry vinegar. I love vinaigrette’s, they are so easy to whip up and are way better than a store bough salad dressing. Trust me, it’s worth the time to make a home made vinaigrette.

I am looking forward to creating more salads!

Enjoy!

Berry Salad with Honey Vinaigrette

March 31, 2014 by Kay 7 Comments

The honey vinaigrette really compliments the feta cheese, pistachios and fresh berries in my Berry Salad with Honey Vinaigrette.

When the weather gets warmer and spring arrives I enjoy making fresh salads. This particular salad is a mixture of iceberg lettuce and mixed greens as the base and I’ve added sweet peppers, pistachios and feta cheese.

The honey vinaigrette is a basic vinaigrette with olive oil, , champagne vinegar, Dijon mustard and I’ve added honey so you get a nice sweetness to the acidity in the salad dressing.

I’ve chosen to use blackberries in the salad as they were on special at the grocery store this week. Raspberries, strawberries or blueberries would also work well with this salad.

Here are all the ingredients in the salad.

Stuffed Chicken Caesar Sandwich

December 3, 2013 by Kay Leave a Comment

When I came across this recipe, I knew I would need to make it, as I have a love of Caeser Salads and I was looking for a way to incorporate the ever popular pretzel buns into a recipe. This is a fast and simple recipe that packs a lot of flavor. Serve with a fresh fruit salad and you have a refreshing lunch or buy the small pretzel buns and they would be great for a pot luck get together. If you are in a hurry, you can always use store bought Caeser Dressing. Fresh parmesan cheese is really key in this recipe.
