Berry Salad with Honey Vinaigrette

The honey vinaigrette really compliments the feta cheese, pistachios and fresh berries in my Berry Salad with Honey Vinaigrette.

When the weather gets warmer and spring arrives I enjoy making fresh salads. This particular salad is a mixture of iceberg lettuce and mixed greens as the base and I’ve added sweet peppers, pistachios and feta cheese. 

The honey vinaigrette is a basic vinaigrette with olive oil, , champagne vinegar, Dijon mustard and I’ve added honey so you get a nice sweetness to the acidity in the salad dressing.

I’ve chosen to use blackberries in the salad as they were on special at the grocery store this week. Raspberries, strawberries or blueberries would also work well with this salad.

Berry Salad with Honey Vinaigrett

Yield: 4 Salads

Berry Salad with Honey Vinaigrett

Ingredients

  • For the Salad:
  • 1/2 head of Iceberg Lettuce
  • 4-6 ounces of fresh greens
  • 1 Sweet Pepper, sliced
  • 1/2 cup pistacios, chopped
  • 1/3 cup Feta Cheese, crumbled
  • 1 pint blackberries
  • For the Dressing:
  • 1 tsp. dijon mustard
  • 1/4 tsp. garlic powder
  • 3 tbsp. champagne vinegar
  • 1 tbsp. honey
  • Salt & Pepper to taste
  • 1/2 cup olive oil

Instructions

  • Wash and arrange the lettuce and fresh greens on 4 plates. Top each salad with some of the peppers, pistachios, feta cheese and blackberries.
  • Whisk together all of the dressing ingredients and pour some of the dressing over each salad.

    Yum, this sounds so good……..I love salads with fruit in them, and like the sound
    of the dressing as well. I have several of these kinds of salads I make and they
    are always a hit. Will have to give yours a try.
