Homemade Taco Seasoning

Homemade Taco Seasoning uses every day spices, can be whipped up in minutes, stores well and can be used in many recipes.

Cinco de Mayo is next Monday, May 5th. I thought I would dedicate this week to Mexican recipes.

First up is my recipe for Homemade Taco Seasoning. I know you are probably thinking it’s just as easy to buy taco seasoning at the grocery store but I will tell you Homemade Taco Seasoning has NO MSG, store bought does. No one likes MSG, but it is out there in a lot of items at the grocery store. Here is a simple way to cut back on MSG.

Homemade Taco Seasoning

Yield: Approx. 4 tablespoons

Homemade Taco Seasoning

Ingredients

  • 3 tbsp. chili powder
  • 1 tsp. oregano
  • ½ tsp. garlic powder
  • 4 tsp. cumin
  • ½ tsp. red pepper flakes
  • 2 tsp. paprika
  • 1 tsp. sea salt
  • ½ tsp. black pepper
  • 2 tsp. onion powder
  • 1 tsp. coriander

Instructions

  • Add all the spices in a bowl and mix to combine. Store in an air tight container (I used a canning jar) in a cool, dry place.
  • I generally use 2 tbsp. of taco seasoning in place of a taco seasoning packet.

Shrimp Scampi

Shrimp Scampi tastes like you spent hours in the kitchen but comes together in under 30 minutes!

I whipped up this recipe on Friday evening before the Hubby and I started to watch Lost from the beginning. We watched it when it was on TV but didn’t get to see or didn’t pay close enough attention to get all the details of the show.

It’s as good today as it was when it was on all those year’s ago. We are watching it on Netflix. Do you have Netflix? If not, you must, it is the best. My only problem is I tend to spend too much time in front of the TV and neglect other things I need to be doing (like housework).

Back to the recipe….you saute garlic in olive oil and butter, then you toss in the shrimp and some spices.

After the shrimp has been sauteed for a few minutes you toss in the linguine and mix it all up and voile, your dish is ready. Just plate it up and toss on some freshly grated parmesan and some herbs if you like.

Serve this up with a salad or try my recipe for Pesto Cheese Bread and you have a nice dinner to share with your Sweetie!

Shrimp Scampi

Ingredients

  • 12 ounces of linguine, cooked according to package directions
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • 4 cloves of garlic
  • 1 lb. shrimp, deveined and shells removed, patted dry
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ tsp. paprika
  • Parmesan cheese for garnish
  • Fresh parsley or oregano for garnish, optional

Instructions

  • While the pasta is cooking, heat a pan over medium heat and add the butter and olive oil. Mince the garlic and add it to the pan, sauté for 1 minute and add the shrimp, salt, pepper and paprika. Saute until the shrimp are pink, approx. 5 minutes, stirring frequently.
  • Take the pan off the heat and add the pasta and stir to combine and you are ready to serve. Top with parmesan cheese and parsley or oregano if desired.

Notes

I used fresh shrimp for this recipe. If you use already cooked shrimp, you won't need to saute the shrimp as long. Make sure the shrimp are thawed before making them.

New Year’s Resolutions & A Plan To Eat Better

2014 has arrived, are you ready for it? Do you make New Year’s resolutions? Do you stick to them or do they never materialize? Some of the big resolutions are eating better, exercising and losing weight. Do these sound familiar? What is on your list this year?

I don’t always make resolutions, especially one’s that I know I will not follow through with or will never happen. I would rather make resolutions that will make me feel good, will help other people or is easy enough that I can say, I DID IT! I will say that my daughter’s have been on my case (and my hubby Bill) to get more exercise. My three girl’s do exercise on a regular basis and I would like to come up with a simple exercise routine that I will want to do on a regular basis and that will make a difference, suggestions anyone?

If you are looking to eat healthier and possibly lose a little weight, I think I can help you with this. My blog will give you recipes that incorporate fruits and vegetables along with carbs, protein and fat. I try and make my recipe’s low in fat if I can. I also think eating in moderation is a great way to eat items you like without having to cut them out of your diet all together.

I am not a blogger that weighs 100 pounds! I won’t give you my actual weight, but I can tell you that I am a size 12 and I am not afraid to admit that. As I have told people before, I love food way too much to be an itty bitty size. I have gained a few pounds after making the 12 Days of Christmas Treats even though I gave a large amount of those treats away, but I know that I can get back on track and drop a few pounds, so that is on my short list of resolutions and I know I can accomplish this.

Happy New Year!

As 2013 comes to a close, I want to wish everyone out there a Happy New Year! I am very excited to enter 2014 with a lot of hope, excitement and ideas for my blog and I can’t wait to share everything with my loyal followers. I had a few days off over the last week and I have spent most of that time with my family, but I did take some time to be in the kitchen mixing up some great recipes that I will be sharing with you in the coming year.

One of my goals for 2014 is to rapidly increase my following on my blog. How do I do that? The biggest way is to get my current followers to share my blog with friends and family. So, I am asking you to share my blog through Facebook, Twitter, Instagram and Pinterest (just click on the name and be redirected to my social media links). The weather in Wisconsin is bitterly cold, in the negative numbers, so I will be staying in to bring in the new year. Whether you are staying in or going out to bring in the new year, have fun celebrating and I will be back in a few days with some recipes.
