Flavored Butters

I am a big fan of flavored butters. Slap some butter in a bowl and add in your favorite flavors and it can bring a dish to life. My favorite way to use a flavored butter is on a steak but they work well on chicken, fish, breads and vegetables to name a few.

Here is a list of some different variations of flavored butters:

Garlic Butter

  • 1/2 cup butter
  • 4 cloves peeled garlic, minced fine
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh lemon juice (optional)
  • Salt to taste

Horseradish Butter

  • 3/4 cup butter
  • 2 tablespoons of bottled horseradish, drained
  • 2 tablespoons minced fresh chives (optional)

Italian Herbs Butter

  • 1/2 cup butter
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh oregano
  • 1 tsp. garlic salt

Smoky Tomato Butter

  • 1/3 cup unsalted butter, softened
  • 1/2 teaspoon tomato paste
  • 1/4 teaspoon smoked paprika
  • Sea salt and freshly ground pepper to taste

Blue Cheese Butter

  • ¼ cup butter or margarine, softened
  • ¼ cup crumbled blue cheese (1 oz.)
  • 2 tsp. chopped fresh chives, optional

Pesto Cheese Bread

Are you in need of a quick appetizer or a side to go along with your favorite Italian dinner? Pesto Cheese Bread is as delicious as it is quick.

You take a crusty loaf of Ciabatta Bread (French Bread will work too), slice it in half lengthwise.

Spread some prepared pesto on the bread and sprinkle with mozzarella cheese. You can skip the cheese if you like, I like to eat it both ways.

Yield: 12 slices

Ingredients

  • 1 loaf of Ciabatta Bread
  • 1/2 cup prepared Pesto
  • 1 cup Mozzarella Cheese, shredded

Instructions

  • Preheat your oven to 375 degrees. Line a baking sheet with foil.
  • Cut the loaf of bread in half lengthwise. Spread 1/4 cup of pesto on each half of the bread.
  • Sprinkle each half with 1/2 cup shredded mozzarella cheese. Place the bread on the baking sheet and bake for 15-20 minutes, until the cheese is melted and heated through.

Notes

If you want, you can skip the mozzarella cheese and just make Pesto Bread.

Greek Shrimp

I am a huge fan of shrimp. I can pretty much eat them in any form. Today’s recipe for Greek Shrimp has moved high on my list of my favorite shrimp recipes.

You start this recipe on the stove and saute onions, then add in tomatoes and spices.

Then you pile half of this mixture into an oven safe dish, add in the shrimp and then pile on the  last of the tomato mixture.

Pour the feta cheese, I used garlic herb, on top of the mixture and bake the Greek Shrimp so all the flavors blend and the juices thicken.

The feta shrimp really completes this dish. I served it on french bread but you could easily make this a full meal and serve it over rice or noodles.

Greek Shrimp

Ingredients

  • 1 ½ lbs. shrimp, cooked
  • Olive oil
  • 1 medium onion, chopped
  • 2 green onion, optional
  • 2 tsp. fresh garlic
  • 28 oz. can diced tomatoes
  • ½ cup white wine
  • 1 tsp. oregano
  • Salt & pepper to taste
  • Red chili flakes to taste
  • 4 ounces Feta cheese, crumbled (I used Garlic & Herb)

Instructions

  • Preheat oven to 350 degrees. Dry shrimp with some paper towel and set aside.
  • In a large skillet, heat oil and fry onions until transparent. Add green onions (optional) and garlic. Cook for 2 more minutes. Add the tomatoes, wine, oregano, salt, pepper and chili flakes. Cook for 30 minutes or until the liquid has dissolved.
  • Spoon half the tomato mixture into a baking dish. Add shrimp and add the rest of the tomato mixture. Sprinkle with the feta cheese. Bake for 20-25 minutes until bubbly. Serve with hot French bread as an appetizer or serve with rice or pasta for a main dish.

Baked Ham and Cheese Sandwiches

Game Day Food recipe for today is Baked Ham & Cheese Sandwiches. I know this recipe might seem a bit plain or simple, but let me tell you, this will be the tastiest ham & cheese sandwich you have ever eaten!

You mix together some tasty honey and mustard for the sauce on the sandwiches.

You add the sauce to each side of the bun, then add some cheese and a good portion of ham.

Add some more cheese and slap both sides together.

Place the sandwiches in the baking dish and cover with foil.

Baked Ham & Cheese Sandwiches

Yield: 6 large or 12 small sandwiches

Baked Ham & Cheese Sandwiches

Ingredients

  • 6 tbsp. honey
  • 4 tbsp. Grey Poupon Country Dijon Mustard
  • 12 small or 6 large Kaiser rolls
  • 1 lb. sliced honey baked ham
  • 12 slices medium cheddar cheese, cut in half

Instructions

  • Preheat oven to 375 degrees.
  • Mix together the honey and mustard and set aside.
  • Line a baking pan with foil, enough to cover the bottom of the pan and to be able to cover the top once the sandwiches are together.
  • Cut open the buns and spoon some of the honey mustard sauce on each side of the bun. Add a half slice of cheese, then add ham to the sandwich and put the two sides together.
  • Place the sandwiches in the foil lined pan and cover the tops of the sandwiches with the foil.
  • Bake for 15-20 minutes or until the cheese, then another slice of cheese has melted.

Notes

I really like cheddar cheese with my ham sandwiches but feel free to use any type of cheese you like.
