Sausage

Sweet Italian Sausage Strata

May 5, 2014 by Kay 1 Comment

Sweet Italian Sausage Strata is a make ahead breakfast item with sausage, eggs, Italian bread and cheddar and parmesan cheese.

Here is another idea for Mother’s Day Brunch, Sweet Italian Sausage Strata. You can make it the day before, let it set over night and bake it the next morning. Serve this along side a fresh fruit salad, coffee and juice and brunch is complete!

The bread soaks up the egg mixture a lot better if the bread is day old. I used an Italian bread in this recipe, I love the amount of crust the bread offers. The parmesan cheese forms a crust on the top of the strata and comes out of the oven  crispy, trust me, it’s very tasty. It’s important to grate fresh parmesan, it makes a difference in this recipe.

I prefer Sweet Italian Sausage in the strata, but feel free to use a spicy sausage, that would work well also.

Enjoy!

  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. dried basil

  • In a separate bowl, add the eggs, half & half, milk, salt, pepper and basil. Whisk to combine.
  • Pour the egg mixture over the bread/sausage mixture. Stir to combine making sure the bread soaks up the egg mixture.
  • Pour the mixture into a greased 9 x 13 baking dish. Cover the dish with plastic wrap and refrigerate for a minimum of 1 hour or as long as overnight.
  • . If you refrigerated overnight, remove from fridge and let come to room temperature for 1 hour before baking.
  • To bake, preheat oven to 325 degrees and bake for 50 minutes. Let stand 10 minutes before serving.

Cajun Sausage Frittata

April 13, 2014 by Kay 4 Comments

Enjoy this hearty Cajun Sausage Frittata for breakfast, brunch or dinner. A tasty egg dish that has an edge with cajun spices.

I enjoy breakfast for dinner and the other night I had a pound of sweet italian sausage staring me in the face. I opened the fridge and saw 2 dozen eggs and decided a frittata would be the perfect option.

The Cajun Sausage Frittata is layered and baked to a golden brown. The sausage is browned and added to a 9 x 13 pan. Saute shallots and roasted red pepper and layer that in the pan next, then top with cheese. Mix together the eggs and spices, pour over the layers and it’s ready to bake.

If you are making this for breakfast or brunch serve it with fresh fruit and if you are serving it for dinner add a salad to the menu. Although, this is perfect served on its own.

Sausage and Peppers in Beer Sauce

February 23, 2014 by Kay 3 Comments

A real Wisconsin favorite….sausage & beer. Peppers are sautéed, sausages are braised and beer is added in to slow cook and give this dish a unique flavor that is out of this world good! This is a quick fix meal, perfect for a week night.

A pan full of delicious flavors.

A pan full of delicious flavors.

Pan fry the sausages (use your favorite kind) and set aside. Along with the peppers you add onion and seasoned diced tomatoes before adding in a dark beer. Add the sausages back in and let simmer. The sauce will reduce and the flavors will intensify.

You could easily stuff the sausage and peppers into a hoagie and make it a sandwich.

Updated Chicken Chow Mein

December 8, 2013 by Kay Leave a Comment

Do you remember having Chow Mein as a kid? I remember it, but the version I remember consisted of hamburger with a can of La Choy Chow Mein added in with some crunchy noodles thrown on top. My version is much better! It uses chicken sausages and a fresh sauce with soba noodles. I love any type of food that is Asian, and this is a quick and easy recipe when I have a craving.

  • 1 pound chicken sausages
  • 4 garlic cloves, minced
  • 2 tablespoons minced ginger
  • 4 ounces snow peas, cut in half
  • ½ tsp. red pepper flakes
  • 1/2 pound sobe noodles, cooked
  • 1/3 cup orange juice
  • 1 cup chicken stock mixed with 3 tablespoons of hoisin sauce and 2 teaspoons of cornstarch
  • Salt to taste

Instructions

  • In a wok or large pan, heat 2 tablespoons of the oil. Add the chicken sausage and fry over medium high heat, until just cooked through, per package directions. Transfer to a plate, when cooled, slice into 1 inch pieces.
  • Heat the remaining 3 tablespoons of oil in the wok. Add the garlic and ginger and stir-fry over moderately high heat until golden, 1 1/2 minutes. Add the snow peas and red pepper flake. Add the orange juice and stir over moderately high heat for 30 seconds. Add the sauce mixture, stir until thickened, about 2 minutes. Add the noodles and sausage, season with salt and stir-fry for 4 minutes. Remove from the heat and serve.
  • You could use a jalapeno or red chile pepper in place of the red pepper flakes. You could use a spaghetti noodle in place of the sobe noodes.
  • Variation:You could use a jalapeno or red chile pepper in place of the red pepper flakes. You could use a spaghetti noodle in place of the soba noodes. You could also add in other vegetables like broccoli and sweet peppers.
