Tidbits & Nibbles #10

August 1, 2014 by Kay Leave a Comment

TGIF my loyal followers!

Can you believe it’s August 1st? I am in shock, where has the summer gone? I guess I need to make a point to enjoy the rest of summer before it flies by me.

Do you have any plans for the weekend? If so, I hope you enjoy your weekend. I will be starting the canning season and on the agenda this weekend is Dilly Beans. Are you familiar with Dilly Beans? They are pickled green beans, a great way to preserve the vegetable.

This past Sunday I attended a Farm Dinner at Park Ridge Organics and let me tell you, it was such a fantastic meal. A Farm Dinner is a connection between farm and food. Fresh vegetables are picked from the fields and a chef creates recipes with the vegetables and prepares the dinner on site.

Tables are set up in the fields, or in our case, inside the barn (the weather wasn’t cooperating for an outdoor dinner). There were 60 people in attendance. Along with the courses, a wine and beer are selected to go with each course. Here are photos of the dinner, each photo will give a description of the picture.

Enjoy!

Tidbits & Nibbles #9

July 26, 2014 by Kay Leave a Comment

Hello Everyone! How is the weather by you? Here in Wisconsin it’s hot and humid. I don’t mind the hot, it’s the humid I could do away with. I will be honest, I would rather have the heat than the cold weather in winter.

I treated myself yesterday with a Spa Pedicure and let me tell you, it was fabulous! Hot towels are wrapped around your calves and they use hot stones to massage the feet and calves. The massage chair practically puts me to sleep. I picked out a hot pink nail polish to make the pedicure complete. I don’t often get a pedicure so it’s really a treat when I do!

The husband, my daughter Mackenzie and I went out to dinner last night. I enjoyed the usual Friday Fish Fry with hand breaded cod and a homemade tartar sauce. Bill had a Ribeye sandwich and Mackenzie had Blackened Tuna. Everything was equally delicious. While we were waiting I was scanning the drink menu and they had Ice Cream Drinks; Pink Cadillac, Grasshopper and White Dove to name a few. I decided I need to recreate some of these drinks for the blog, so stay tuned.

Now on with Tidbits & Nibbles for the week, click on the photo to be directed to the web-sites;

I often get asked what spices I keep on hand, here is a post I did on Stocking Your Spice Rack:

Stock Your Spice Rack 2

One of the places I get the majority of my spices at is The Spice Crate. It’s a local store that carries a large assortment of spices that you can sniff and get a better idea of the flavor it will add. The Spice Crate also carries coffees, teas, chocolates, sprinkles/sugars and so much more. You can order on-line, so for those of you not in the Fond du Lac area, you still can enjoy everything they offer.

I like to double this recipe and have chicken on hand.

A new way to enjoy potatoes on the grill.

I love pretzel buns and these are stuffed with goodness!

I picked up some New York Strip Steaks and this is how I am going to prepare them.

This blueberry dessert looks simple & delicious.

Tidbits & Nibbles #8

July 18, 2014 by Kay Leave a Comment

Welcome to Tidbits & Nibbles #8. Did you have a good week? Eat anything new? Try anything new?

As some of you know, I get a box of vegetables every week from Park Ridge Organics. I can’t say enough good things about Robyn & the crew at Park Ridge, part of that crew is my daughter, Mackenzie. They all work very hard to provide fresh vegetables that are beautiful to look at and even tastier to eat.

Mackenzie hard at work harvesting onions.

I also do some work for Park Ridge. Each week I gather recipes to go with the vegetables that the members receive in their box for the week. I also put together farm workshops. In the past I have done, canning & preserving, pesto and bruschetta, using fresh herbs and last year we made home made gnocchi. This year the workshop is how to make fresh ravioli and fresh sauces to sample. If you are interested in attending, click here.

Here I am assisting some of the attendees.

Here is a recap of the recipes I featured this week. Click on the photo to get to the full recipe.

Tidbits & Nibbles #7

Happy Friday Everyone! TGIF!

How was your week? Did it go fast? or maybe a bit too slow? Either way the weekend is here and I hope you get to do what makes you feel happy!

My week went rather quickly after coming off of a 3 day weekend for the 4th of July. Speaking of the 4th, we took a ride up to Door County for the day. For those of you who are unfamiliar, Door County is located in the “arm” of  northern Wisconsin and is well known, click here to learn more.

The scenery in Door County is so beautiful and it has quaint little towns filled with small shops, B&B’s, Inn’s, restaurants and bars. There are a couple of state parks where you can camp, bike ride, picnic and so much more. Here are a few of my favorites from Door County. Click on the photos to get to the web-sites.

Fat Louie’s Olive Oil Company. I tasted the Sicilian Olive Oil and it is super delicious. It has a hint of chipotle along with basil, garlic and parmesan.

We stopped at Island Orchard Cider where they make a local hard cider. Crisp and delicious, we sampled 7 different varieties. Oak Aged Apple Cider was our favorite.

Door County Bakery is a must stop when we go to Door County. They offer so much and I have never been disappointed with anything I have had here.  They have fresh baked breads, kolachi’s, coffee cake, cookies, desserts, cinnamon rolls, donuts and the list go’s on and on. The one item we never leave without is The Corsica Loaf. The bakers define it as, a marriage of French bread dough with a stone-oven baking process which incorporates our own blend of olive oils and sesame seeds. It is hard to describe but I have never had anything like it and I LOVE IT!

Here is my list of nibbles that caught my eye this week, click on the words in blue to go to the recipe.

These roasted vegetables, what a great way to add extra flavor.

A new way to enjoy chicken salad.

Bacon & Taco’s for breakfast, yes please!

Enjoy a panzanella salad grilled. I so love salad in the summer.

A dip with beer, chile and cheese, what’s not to love?

Frozen Hot Chocolate with Kahlua, sounds like dessert to me!

Enjoy!
