Tidbits & Nibbles #3

Happy Friday to all and welcome to the third edition of Tidbits & Nibbles. I hope everyone had a great work week. I was glad it was a 4 day work week and I am looking forward to the weekend.

The first thing I want to talk about today is my cat Camry Nicole. Camry came to us over 10 years ago by appearing at our back door. To make a long story short, it was December and it was ice cold in Wisconsin so we decided to bring this cute kitty into our home so she could be warm. After trying to find her rightful owners and being unsuccessful, we ended up keeping her. She is such a pretty kitty and the most mild mannered cat you will ever meet.

In 2 weeks we leave on vacation and are headed to the Outer Banks in North Carolina. We are staying at this house;

If you are unfamiliar with the Outer Banks, it’s where Nicholas Sparks book Nights in Rodanthe is based and where the movie was filmed. The house we are staying at is not far from Rodanthe. I am looking forward to some quiet time in the sun and time spent with family.  Follow me on Instagram for updates on my trip while I am there.

Tidbits & Nibbles #2

Happy Friday to Everyone. I hope you all get to enjoy an extended weekend.

Family is visiting from New Hampshire and Baltimore plus we have a birthday party for the youngest Bastians in the family. My niece Hadley turned 4 this week and my nephew Finn turns 2. We will be attending their birthday party on Saturday.

As we gather this weekend with friends and family, may we all remember those who have paid for our freedom and the true meaning of Memorial Day.

Tidbits & Nibbles #1

I’m starting something new on Love Food, Will Share, it’s called Tidbits & Nibbles. I will share tidbits from my life and feature some Nibbles that I’m craving right now. This will be a weekly feature, I hope you enjoy this.

These are my three girls. From the left, Hailey (the oldest), Mackenzie (the youngest) and Kiley (middle girl) and I’m going to brag about them today.

Hailey just graduated with a degree as a Paralegal. She was offered a job earlier this week, way to go Hailey, so proud. Mackenzie has been busy this week finishing up her finals and finishing up her 3rd year at the University of Wisconsin – Milwaukee. She will be home tomorrow and spending the summer with us, can’t wait. Kiley lives in Minneapolis (where she also went to school) and is working at Minnesota Center for Environmental Advocacy. She is working hard to protect Minnesota’s environment, keep up the good work.

I can’t write this post without talking about the newest additions to our household, Oscars and Olives. They make us smile multiple times a day and I’m sure you will agree they are the cutest. Olives has the dark striping and Oscars is the white and gray kitty.

My birthday was a few days before Mother’s Day and I was surprised with this gift from my husband, Mr. B and my girls. BEST. GIFT. POSSIBLE. So pumped to start using this…..

Chicken Fajita Marinade Mix

Chicken Fajita Marinade Mix is my go to marinade for fajitas and much more.

To continue with my Mexican inspired recipe week, here is my recipe for Chicken Fajita Marinade Mix. The strong flavors in this marinade are chili powder and lime, the perfect flavor to marinade chicken breasts in for fajitas.

It is important to plan ahead if you use this marinade, as the chicken needs to marinade for a minimum of 3 hours. Trust me, it’s worth the wait. The chicken will be more tender and juicy.

You certainly don’t need to use this marinade just for fajitas, you can easily just grill the chicken and serve it on a salad, by itself with a fresh salsa served along side or in Chicken Tortilla Soup.

Chicken Fajita Marinade Mix

Ingredients

  • 1 tsp. oregano
  • 1 ½ tsp. cumin
  • 1 tsp. chili powder
  • ½ tsp. paprika
  • 1 tsp. garlic powder
  • 1 tbsp. brown sugar
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¼ cup lime juice, fresh is best
  • ¼ cup olive oil

Instructions

  • In a small bowl mix together with a fork the oregano, cumin, chili powder, paprika, garlic powder, brown sugar, salt and pepper.
  • Add in the lime juice and olive oil and mix to combine. Pour over your chicken breasts and marinade for a minimum of 3 hours or up to 1 day in the refrigerator.
  • Pan fry or grill the chicken breasts and use in fajitas.
