Lettuce Wraps

Lettuce Wraps are filled with ground turkey and doused in an Asian inspired sauce and tossed with water chestnuts, sweet pepper and green onions.

This recipe was inspired by my nephew Jacob. He made a similar Lettuce Wrap when we were on vacation in the Outer Banks. They were so delicious I vowed to recreate the recipe. Jacob used a bottle sauce but I decided to come up with my own sauce and I think I replicated his sauce to the tee.

Jacob used ground chicken in his version and I wanted to do the same, but the grocery store had something else in mind when I went grocery shopping, they were out of ground chicken so I opted for ground turkey. Either one will work fine in this recipe for Lettuce Wraps.

I used Butterhead lettuce for the Lettuce Wraps and topped them with green onions and cashews. I also made a Soy Ginger Sauce for dipping and recommend Sriracha for those of you who like things a bit spicy!

Lettuce Wraps

Ingredients

  • 1 lb. ground turkey or ground chicken
  • 6 green onions, chopped (plus more for serving)
  • 1 small can water chestnuts, drained and chopped
  • 1 red bell pepper, chopped
  • 2 garlic scapes, chopped (optional)
  • ¼ cup hoisin sauce
  • 1 tbsp. soy sauce
  • 2 tbsp. vegetable oil
  • 1 tbsp. freshly grated ginger
  • 2 tbsp. water
  • 1 head of butterhead lettuce
  • Salted cashews
  • Dipping Sauce:
  • ¼ cup soy sauce
  • 2 tbsp. rice wine vinegar
  • 1 tbsp. sugar
  • 1 tsp. freshly grated ginger
  • 1/2 tsp. sesame oil

Instructions

  • In a large saucepan, over medium high heat brown the turkey until cooked through, about 6-8 minutes. Add in the green onions, water chestnuts, pepper and garlic scapes. Reduce the heat to medium and let cook while you mix the sauce.
  • In a bowl, whisk together the hoisin, soy sauce, oil, ginger and water. Pour over the meat mixture and stir to combine. Continue to cook until the mixture comes to a boil, then remove from the heat.
  • While the meat mixture is coming to a boil, whisk together the ingredients for the dipping sauce: soy sauce, vinegar, sugar, ginger and oil.
  • Rinse the lettuce leaves with water, pat dry with paper towel.
  • To serve; spoon some of the meat mixture onto a lettuce leave and “wrap” it together. Serve with green onions, cashews and the dipping sauce.

Tidbits & Nibbles #6

Happy Friday and Welcome to Love Food, Will Share’s Tidbits & Nibbles #6.

Today’s post is all about the Outer Banks, North Carolina. We vacationed for a week and stayed in a home in Salvo,  that was right on the beach. The time was spent with family and fun was had by all.

The smallest family member, Ellie was a joy to be around. She is one year old and such a sweetheart. She entertained us for hours on end, she has the biggest smile and the prettiest eyes. (If other family members that were with us on this vacation are reading this, yes, I enjoyed spending time with you but Ellie stole the show.)

We ate most of our meals at the house, we had so many tasty meals. We enjoyed fresh shrimp and scallops. The fresh fish we prepared included Amberjack, Tuna, Cobia and Flounder. Fresh seafood and fish is the bomb!

Tidbits & Nibbles #5

Happy Friday Everyone!

I hope everyone had a good week. It’s hard to believe we are at the end of June already. Where has the time gone? Weather in Wisconsin started out rainy at the beginning of the week but yesterday and today were sunny and not too humid.

I had to take my two cats, Oscars and Olives to the vet today to get spayed and neutered. I hope they are doing ok by themselves at the vet, they will be spending the night there. The house is awful quiet with out the two of them around. Even my cat Camry seems to be missing her two siblings.

Strawberry Salad with Balsamic Dressing

Strawberry Salad with Balsamic Dressing has a little bit of everything; crispy lettuce, sweet strawberries, the crunch of pecans and a delicious dressing.

I remember years ago when a salad consisted of a wedge of lettuce and dressing, that was it. It was such a chore to eat because it was so bland. These days it’s fun to create new salads with many options for toppings.

My recipe for Strawberry Salad with Balsamic Dressing only has a few ingredients but has tons of flavor. I like the mix of greens and spinach in this recipe, they both can withhold the balsamic dressing.  Strawberries and balsamic dressing are the bomb.  I would have no problem eating just the strawberries draped in the balsamic dressing!

Strawberry Salad with Balsamic Dressing

Ingredients

  • For the dressing:
  • 1 Tbsp. Poppy seeds
  • 1/4 cup white sugar
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • ¼ tsp. paprika
  • ½ tsp. Worcestershire sauce
  • 1 tsp. onion powder
  • For the salad:
  • 1 bunch spinach, rinsed dried & torn
  • 1 bunch mixed greens, rinsed, dried & torn
  • 1 quart strawberries, cleaned, hulled & sliced
  • 1/2 cup pecans, chopped

Instructions

  • In a medium bowl, whisk together the poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion powder. Cover and chill for one hour.
  • In a large bowl, combine the spinach, lettuce, strawberries and pecans. Pour dressing over salad and toss. Refrigerate 10 – 15 minutes before serving.
