Spaghetti & Herb Meatballs

Spaghetti & Herb Meatballs is a flavorful dish that everyone will love. The herb meatballs really steal the show.

My recipe for Herb Meatballs can be used in so many of my recipes, but by far my favorite way to use them is in Spaghetti & Meatballs. I am a pasta lover to the point where I could eat it daily. As I always say, “I love me a good meatball” and this meatball I love!

The pasta sauce I use in this recipe is one that I canned last summer. I can vegetables from our garden and pasta sauce is just one of the many items I make. This particular pasta sauce is a chunky vegetable sauce loaded with onion, pepper and carrots. I will share my canning recipes later this summer/early fall when I will be doing my annual canning. You can easily use your favorite jar of pasta sauce in this recipe.

This is the perfect meal for a family get together or dinner with friends. It comes together quickly and it’s always fun watching how other people eat spaghetti…..are you proper and never slurp the noodles; do you let the noodles hang from your fork and eat from the bottom up? or do you use a spoon and fork like real Italians do?

Spaghetti & Herb Meatballs

Spaghetti & Herb Meatballs

Ingredients

  • 16 ounces spaghetti or linguine
  • 12 large meatballs, cooked
  • 1 quart or 1 large jar of your favorite pasta sauce
  • Fresh parmesan cheese

Instructions

  • Cook the pasta according to package directions. When done, drain the pasta and return the pan to the heat.
  • Reduce the heat to medium, add in the meatballs and pasta sauce; stir to combine. Let cook for 5 minutes and add in the pasta; toss to combine. Cook for an additional 5 minutes or until the meatballs are heated through.
  • Dish the pasta and meatballs and shave fresh parmesan to the top.

Canadian Bacon & Green Olive Pizza

Crispy and smoked Canadian bacon isn’t the only show stopper in this pizza recipe, the green olives make a great addition on the Canadian Bacon & Green Olive Pizza.

As I stated last week, I am back with another pizza recipe to coincide with my recipe for Pizza Dough. So, if you have some pizza dough left or you haven’t made it yet, here is another opportunity.

My husband, Mr. B loves green olives on his pizza. I know black olives are common on pizzas, but you don’t see green olives too often on a pizza menu. If you’ve never tried green olives, I urge you to try it. It adds a nice salty note and is extremely tasty on my recipe for Canadian Bacon & Green Olive Pizza.

Another thing that makes my Canadian Bacon & Green Olive Pizza extra delicious is the fact that I pan fry the Canadian bacon before adding it to the pizza. It makes a big difference.

Canadian Bacon & Green Olive Pizza

Canadian Bacon & Green Olive Pizza

Ingredients

  • 1 pizza dough, see my recipe for pizza dough
  • 2 tsp. Pizza Seasoning, optional
  • 1/2 - 1 cup pizza sauce
  • 12 - 15 slices of Canadian Bacon
  • 1 cup green olives, cut in half
  • 2 cups shredded mozzarella cheese

Instructions

  • Preheat your oven to 375 degrees.
  • Rub your pizza pan with olive oil. Shape the pizza dough to fit the pizza pan.
  • Sprinkle the pizza seasoning over the pizza crust (optional). Spread the pizza sauce on the crust, how much you use depends on how much sauce you like on your pizza.
  • In a frying pan over medium heat, pan fry the Canadian Bacon about 2 1/2 minutes per side. Place the Canadian Bacon evenly on the crust.
  • Toss the cheese evenly over the pizza. Bake the pizza for 15-20 minutes, depending on how dark you want the top of your pizza to be. I baked mine for 20 minutes.
  • Cut the pizza in slices and serve.

Notes

You can use a store bought crust if you like, but a home made crust will taste much better.

Herb Meatballs

This recipe for Herb Meatballs is easy to prepare and is packed full of flavor with tasty spices and parmesan cheese.

I like the versatility of the Herb Meatballs. I use them as an appetizer with Honey Balsamic BBQ Sauce, perfect for a family gathering or pot luck.

A quick weeknight meal would be meatballs subs, heat the meatballs in pizza sauce and add some meatballs to a bun, top it with cheese and you have a delicious sub.

Of course, use the Herb Meatballs for Spaghetti & Meatballs or Baked Ziti. Lastly, I like to use these on a pizza, Meatball Pizza is one of my favorites.

You can form the meatballs into two sizes, either a 1 tablespoon or 2 tablespoon cookie scoop. You can easily double or triple this recipe. You can also freeze them for up to three months baked or unbaked. I prefer to bake mine before I freeze them.

Ingredients

  • 1 lb. ground chuck
  • ½ cup breadcrumbs
  • ¼ cup fresh grated Parmesan cheese
  • 2 tbsp. ketchup
  • 2 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • 2 tsp. basil
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 large egg, lightly beaten

Instructions

  • Preheat oven to 375°. Prepare a baking sheet by lining with foil or parchment paper.
  • In a mixing bowl, add all of the ingredients and mix on low speed until combined, making sure not to over mix.
  • I make the meatballs in two different sizes depending on what I am going to use them for. I like to use a cookie scoop to make them all even in size and I use a 1 tbsp. or a 2 tbsp. scoop. Grab mixture and form into a ball, add it to the baking sheet. Continue making meatballs out of the rest of the mixture and add them to the baking sheet.
  • Bake the meatballs for approximately 15 minutes for the small meatballs and 20-22 minutes for the large.

Notes

Small size yield about 30 meatballs, Large size yield about 15 meatballs.

Four Cheese Pizza

Four Cheese Pizza has an infused garlic oil for the “sauce” and is topped with four cheeses (I’m guessing you already knew that from the recipe title).

Yesterday I posted a recipe for Pizza Dough and as promised I am back with a recipe to top that pizza dough with! I really like the cheese combination on this pizza. Of course there is mozzarella and parmesan, two cheeses I always use on my pizzas and I’ve added cheddar cheese and blue cheese.

If you’ve never tried blue cheese on a pizza, I urge you to try it. My husband, Mr. B and I love blue cheese on pizzas. I will warn you though, you don’t want to use too much blue cheese or it will over power the other cheeses. My recipe calls for 1/2 of cup and that is plenty.

I think you will also like the garlic infused olive oil I use in place of pizza sauce. The garlic really shines through on this pizza and goes well with the strong flavors of the cheese. Of course, you can use pizza sauce if you like, the pizza will be good with either sauce.

Yield: one 14 Inch Pizza

Four Cheese Pizza

Ingredients

  • 1 pizza dough
  • 3 tbsp. olive oil, plus more for the pizza pan
  • 2-3 garlic cloves, smashed with skins removed
  • Pizza Seasoning, optional
  • 1 cup mozzarella cheese, shredded
  • ½ cup cheddar cheese, shredded
  • ½ cup parmesan cheese, shredded
  • ½ cup blue cheese, crumbled

Instructions

  • Preheat the oven to 400 degrees. Brush olive oil on a 14” pizza pan and stretch the pizza dough to fit the pan.
  • Add the 3 tbsp. of olive oil and garlic cloves to a small saucepan and heat on medium heat, once the oil starts to bubble, turn the heat to medium low and cook for 5 minutes. Remove the garlic and brush the pizza dough with the oil.
  • Sprinkle the pizza with pizza seasoning, optional. Sprinkle the mozzarella, cheddar and parmesan cheese on the dough. Crumble the blue cheese over the dough.
  • Bake in oven for 15 minutes or until the cheese starts to bubble and brown. Mine took 15 minutes, yours may take a few minutes more or less.
