Turtles Candy

Welcome to Day 2 of the Twelve Days of Christmas Treats. Today I am featuring candy, Turtles to be exact. Any type of Turtle dessert is always delicious…..Turtle Cheesecake, Turtle Sundae, Cookies, Pie to name a few. The combination of chocolate, caramel and pecans is so satisfying.

Turtles seems to be a classic Christmas Candy. For as far back as I can remember, I remember Turtles on the candy dish this time of the year. I never liked the idea of making turtles, it seemed a bit time consuming, I then ran across this recipe. You bake the pecans and caramels at a low temperature and the caramels melt over the pecans, then you spoon melted chocolate over the top, that’s it!

If you are looking for a gift for someone on your list; a hostess gift, a co-worker, a neighbor for example, you may want to consider making these turtles. Enjoy!

Yield: 24 Pieces

Turtles Candy

Ingredients

  • 72 pecan halves
  • 24 individually wrapped caramels, unwrapped
  • 1 teaspoon coconut oil or shortening
  • 1 cup semisweet chocolate chips

Instructions

  • Preheat oven to 300 degrees F (150 degrees C). Cover cookies sheet with baking liners or aluminum foil, shiny side exposed. If using foil, lightly grease with cooking spray.
  • Place 3 pecan halves in a Y shape on the foil. Place 1 caramel candy in the center of each Y. Bake just until caramel is melted, about 9 to 10 minutes.
  • Heat shortening and chocolate chips over low heat just until chocolate is melted. Spread over candies and allow turtles to set, either in the refrigerate for 30 minutes.

Because you don’t make the caramels into a sauce, these are best served at room temperature.

Slaw Salad with Kale

Kale is a very potent vegetable, full of vitamins and nutrients. The key to get more of this veggie into your diet if you are not a fan of it, try hiding it in some of your favorite recipes. This slaw salad is the perfect recipe for this. One thing to remember when working with kale is to remove the long stem along the spine of the kale.

Slaw Salad with Kale

Ingredients

  • 1- 16 ounce package of broccoli slaw or 16 ounces of broccoli, chopped
  • 2-3 cups chopped kale
  • 2 kohlrabi, peeled and cut into chopsticks
  • 1 pkg. Ramen Noodles, noodles broken into small pieces
  • 1/2 cup sunflower seeds
  • 1/2 cup slivered almonds
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/8 - 1/4 cup sugar, use 1/4 cup if you want a sweeter dressing
  • 1 cup balsamic vinaigrette or Italian dressing

Instructions

  • Place slaw (or broccoli), kale, kohlrabi and noodles in a bowl and set aside.
  • In a separate bowl, whisk Ramen seasoning packet, oil, water, sugar and dressing until sugar is dissolved. Pour over salad. Mix thoroughly.
  • This salad is best when it has time to sit so the flavors come out. I usually add the sunflower seeds and almonds right before it is served so they don't get soggy.
