Loaded Nachos

Loaded Nachos piles layers of crispy chips, seasoned beef, vegetables and lots of cheese to give you a total comfort food.

Nachos are an all time favorite of mine. After I posted my recipe for Homemade Taco Seasoning, I new I needed to come up with a recipe for nachos and Loaded Nachos is where I ended up. And it definitely was the perfect place to end.

I double layer everything in this recipe, so be prepared for a lot of Loaded Nachos. This would be a great recipe to make for a party or BBQ.  Serve the nachos with salsa, sour cream and wedges of lime. A squeeze of fresh lime juice really gives the nachos a nice punch.  You could easily skip the meat and serve this as a vegetarian Loaded Nachos.

Yield: 6-8 Servings

Loaded Nachos

Ingredients

  • 1 bag tortilla chips
  • 1 lb. ground chuck
  • 2 tbsp. taco seasoning (try my homemade taco seasoning)
  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 can black beans, rinsed and drained
  • 2 cups shredded Monterey Jack Cheese
  • 2 cups shredded Pepper Jack Cheese
  • Fresh lime wedges
  • Salsa
  • Sour Cream
  • Green Onions, diced

Instructions

  • Preheat your oven to 350 degrees.
  • Heat a sauce pan on medium high heat. Add the ground chuck and cook until cook through, about 8 minutes. Drain the excess fat from the pan and stir in the taco seasoning. Set the ground chuck aside on a plate.
  • In the same pan, add the olive oil, onion and peppers. Saute for approx. 5 minutes, until the onions and peppers start to soften.
  • On a large baking sheet spread 1/2 of the bag of tortilla chips. Pile on half of the ground chuck, onions, peppers, black beans and cheese.
  • Pile the rest of the tortilla chips on top of the first layer. Then pile on the rest of the onions, peppers, black beans and cheese.
  • Bake in the oven until the cheese is melted, about 10-12 minutes.

Beef Basil Stir Fry

Beef Basil Stir Fry is a speedy recipe that you will have on the table in less than 30 minutes.

I like the combination of beef and basil in this recipe, they work well together. Normally you use fresh basil in Italian dishes, but adding basil to stir fry recipes is another great use for the herb.

The vegetables in this stir fry are onion, sweet pepper, snow peas and the surprise vegetable is kohlrabi. If you have never tried kohlrabi, I urge you to try it, it has a peppery flavor to it and adds a nice crunch to the stir fry. The sauce is made up of sweet chili sauce and soy sauce and if you like a little heat add some sriracha.

Beef Basil Stir Fry

Beef Basil Stir Fry

Ingredients

  • 2 tbsp. olive oil, divided
  • 1 lb. New York Strip Steak, sliced thin
  • 1 small onion, sliced
  • 2 small or 1 large sweet pepper, chopped
  • 1 kohlrabi, peeled & sliced
  • 2 cups snow peas
  • ½ cup sliced fresh basil plus more for garnish
  • ¼ cups Thai Sweet Chili Sauce
  • 3 Tablespoons Soy Sauce
  • Rice, for serving
  • Sriracha, for serving

Instructions

  • In a large pan, heat 1 tbsp. of olive oil over medium high heat. Add the strip steak and cook for 4-5 minutes, just until cooked through. Transfer steak to a plate and set aside.
  • Add the remaining 1 tbsp. of olive oil to the pan and add the onion, pepper and kohlrabi. Saute 3-4 minutes and add the snows peas. Cook for an additional 2 minutes and add the steak back into the pan.
  • Mix together the sweet chili sauce and soy sauce, add to the pan and stir to combine. Remove the pan from the heat and stir in the ½ cup basil. Serve immediately over cooked rice, garnish with basil. Add sriracha if you like.

Notes

In place of kohlrabi, feel free to add matchstick carrots or broccoli to the stir fry.

Chili Lime Chicken Fajitas

Chili Lime Chicken Fajitas start with marinated chicken breasts, peppers and onions that are stuffed into a flour tortilla and end with fresh toppings.

The fajitas get there flavor from the marinade I use on the chicken breasts, Chicken Fajita Marinade Mix. You marinade the chicken breasts for 3 hours or more, then they are grilled to sear in the flavor and juices.

Along with grilling the chicken, you grill peppers and onions on high heat. I think this is a very important step, having a high enough temperature to cook the vegetables quickly so they still are a little firm when you add them to your fajita.

For toppings, I use avocado, limes and cheese. Feel free to add in guacamole, sour cream or fresh tomatoes. Add your favorite toppings, the possibilities are endless.

I hope you have enjoyed my week of Mexican recipes to celebrate Cinco de Mayo, which is celebrated on Monday, May 5th.  Mexican food ranks high on my list of favorites, I hope you enjoy the recipes as much as I do.

Chili Lime Chicken Fajitas

Chili Lime Chicken Fajitas

Ingredients

  • Chicken Fajita Marinade Mix (my recipe)
  • 4 boneless, skinless chicken breasts
  • 2 tbsp. olive oil, divided
  • 1 large onion, sliced
  • 1 large sweet pepper, sliced
  • Flour tortillas
  • Avocado, cheese, limes for toppings

Instructions

  • Add the chicken breasts to the marinade and let marinade for a minimum of 3 hours.
  • Heat a grill pan or frying pan on medium high heat, add 1 tbsp. of olive oil. Add the chicken breasts and grill approximately 6-8 minutes per side or until cooked through. The time will depend on the thickness of your chicken. When the chicken is done, set it aside.
  • Add 1 tbsp. of olive oil to the pan and add the onion and peppers, cook for approx. 3 minutes until the peppers and onions start to brown.
  • To serve, take a flour tortilla and fill with chicken, peppers and onions and top with your favorite toppings.

Tacoritos are a combination of a taco, burrito and an enchilada and will easily become a family favorite recipe.

To continue with my week of recipes to make for Cinco de Mayo on May 5th I decided to feature my recipe for Tacoritos. This delicious Tex Mex recipe starts with a homemade enchilada sauce that uses chili powder and gives this dish a bit of a smoky flavor. The meat mixture is a combination of beef, beans and taco seasoning (here is my homemade recipe for taco seasoning).

To assemble these, you place some of the sauce on a flour tortilla, add some beef mixture, raw onions and cheese. Once all of the Tacoritos are assembled you pour sauce over the top and add some more cheese to take this recipe over the top because more cheese always takes a recipe over the top 🙂

The original recipe for Tacoritos calls for a combination of beef and sausage, you may use this combination if you like, either way they will be delicious.

Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 3 ½ cups water
  • 3 tablespoons chili powder
  • 1 teaspoon garlic salt
  • 1 ½ lbs. ground chuck
  • 1 cup refried beans
  • 1/4 cup chopped onion
  • 10 flour tortillas, warmed
  • 2-3 cups shredded Monterey Jack cheese

Instructions

  • Preheat the oven to 350 degrees.
  • In a saucepan over medium high heat, melt butter. Whisk in the flour and cook for 1 minute. Whisk in the flour and bring to a boil; let boil for a couple of minutes. Whisk in the chili powder and garlic salt. Reduce the heat and simmer uncovered for 10 minutes.
  • In a large skillet over medium heat, cook the ground chuck until meat is no longer pink. Drain the excess fat from the pan. Stir in the refried beans and heat through.
  • Spray a 9 x 13 baking dish with cooking spray. Spread a 1/3 cup of the sauce in the baking dish.
  • Spread 1 tablespoon sauce over each tortilla; place about a ¼ cup meat mixture towards the end of the tortilla. Top each with some onion and shredded cheese. Roll up and place seam side down in prepared dish.
  • Pour remaining sauce over the top; sprinkle with remaining cheese.
  • Bake, uncovered for 20 minutes or until bubbly and cheese is melted. Serve with sour cream, grape tomatoes and green onions if desired.

Notes

You may use a combination of beef and sausage in this recipe.
