Spicy Pickled Chard Stems

Here is a quick, easy and resourceful way to use the stem of swiss chard and turn it into a crunchy snack.

There are many ways to use the leaves of swiss chard but most times the stems get discarded. I came across this recipe for Spicy Pickled Chard Stems and I thought I would give it a try. I must say, the recipe was a success.

What most will like about the recipe is how easy it is to make. The pickling process is done by refrigerating the stems with the brine you mix together. You simple cut the stems from the chard and chop it into the length of the jar. Add in seasoning/spices. Boil the brine and pour it over the stems. Let it sit two days and you have a crunchy snack.

Yield: 2 Half Pint Jars

Spicy Pickled Chard Stems

Ingredients

  • 1/2 cup rice wine vinegar
  • 3/4 cup distilled white vinegar
  • 1/4 cup sugar
  • 1-1/2 teaspoons salt
  • 1-1/2 tablespoons sriracha
  • 1/4 teaspoon celery seed, divided
  • 1/2 teaspoon black peppercorns, divided
  • 1/2 teaspoon yellow mustard seeds, divided
  • 2 cloves garlic, divided

Instructions

  • Cleaned stems from one large bunch of rainbow chard stems, cut to fit into mason jar, about 3/4 inch from the lip.
  • Add each half of the celery seed, peppercorns, mustard seeds, and garlic to each jar. (If just making one jar, this can all go together.) Pack chard stems tightly into jars. Bring vinegars, sugar, salt, and siracha to a boil, in a small saucepan until sugar and salt is dissolved. Then pour over chard stems. Let sit until cool, then put lids on and refrigerate. Wait two days before eating for flavors fully develop. Will last 1 month in refrigerator.

Pad Thai Salad

Pad Thai Salad is filled with crunchy greens and vegetables and is topped with a tangy dressing that makes your mouth sing!

The surprise ingredient in this recipe is swiss chard and let me tell you it really makes this salad a winner. Along with the crunch of the swiss chard there is carrots, red cabbage, green onions, radishes and last but not least crunchy cashews.

The dressing is a soy honey vinaigrette with a hint of sriracha, the perfect combination for this salad. It’s best to top the Pad Thai Salad with the dressing and then let it sit for 20-30 minutes so the dressing can saturate the swiss chard.

You could easily add chicken to this recipe and make it a main dish rather than a side dish.

Pad Thai Salad

Ingredients

  • 1 large bunch swiss chard
  • ½ small red cabbage
  • 4 carrots
  • 4-6 radishes
  • 3 green onions, use white & green parts
  • ½ cup fresh cilantro
  • 2 tbsp. olive oil
  • 1 tbsp. soy sauce
  • 2 tbsp. champagne vinegar
  • 1 tbsp. peanut butter
  • 1 tbsp. honey
  • 1 tbsp. water
  • Juice from ½ lime
  • ½ tsp Sriracha
  • ½ tsp fresh ginger, grated
  • ½ cup cashew pieces

Instructions

  • Thinly slice the swiss chard, cabbage, carrots, radishes and green onions. Add everything to a large bowl. Chop the cilantro and add to the bowl.
  • In a canning jar or bowl add the oil, soy sauce, vinegar, peanut butter, honey, water, lime juice, Sriracha and ginger. Shake the jar or whisk the ingredients.
  • Drizzle the dressing over the ingredients in the bowl and use a tongs to toss the dressing and salad. Dish the salad on plates and sprinkle with some of the cashews.

Swiss Chard Muffins

Swiss Chard Muffins are the perfect item to make ahead for morning breakfasts or a weekend brunch with family and friends.

Are you familiar with Swiss Chard? Swiss chard has big green leafs and bright colored stems that are usually yellow or red. It is similar to kale, but has a less dense leaf and has a high nutritional value like spinach.

I came up with this recipe last vegetable season. Swiss Chard shows up in our Vegetable Share box a couple of times through out the season and I like to come up with new ways to use it.

Swiss Chard Muffins are impressive looking when they come out of the oven. Once you eat one, you will want to eat another, they are delicious and addictive.

Swiss Chard Muffins

Ingredients

  • 4 cups swiss chard, stems removed, leaves sliced thin
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 1 1/3 cup sour cream
  • 4 eggs
  • 1 1/3 cups cheddar cheese, shredded
  • 2/3 cup plain bread crumbs
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¾ tsp. baking powder

Instructions

  • Preheat oven to 350 degrees.
  • In a sauté pan, heat the olive oil over medium high heat, add the swiss chard and sauté until wilted about 3 minutes, remove from the heat and set aside.
  • In a bowl, combine sour cream, eggs, cheese, bread crumbs, salt, pepper and baking powder. Mix well and add the cooked greens. Stir to combine.
  • Line a muffin tin with paper liners. Divide the mixture between the muffin tin. Bake for 30-35 minutes, until the eggs are set.
