Sloppy Joe’s

Sloppy Joe’s are an All American Classic sandwich full of hamburger, onion, pepper and a tangy sauce.

This recipe certainly takes me back to my childhood, although the recipe my Mom used to make is a bit different than my recipe. I add a bit off BBQ sauce, sweet pickle relish and apple cider vinegar to give the sandwich a unique and delicious tangy flavor.

I use ground chuck to reduce the amount of fat in the sandwich and I add in peppers to incorporate more vegetables. I like to find ways to add more vegetables into my recipes. If you have kids that don’t like to eat their vegetables, this is a good trick to have up your sleeve.

Rather than serving the Sloppy Joe’s on a bun, you can also serve this on top of tortilla chips with cheddar cheese melted on top. All you need to do is preheat your oven to 350 degrees, line a baking sheet with tortilla chips, top the chips with the hot Sloppy Joe mixture and sprinkle with cheese. Bake for 7-10 minutes until the cheese is melted.

Sloppy Joe’s

Ingredients

  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 1 medium sweet pepper, chopped
  • 1 ½ lb.s ground chuck
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ cup sweet pickle relish
  • 2 – 5 tbsp. apple cider vinegar * See note below
  • ½ cup ketchup
  • 2 tbsp. brown sugar
  • 1 tbsp. yellow mustard
  • 1 cup BBQ sauce, **

Instructions

  • In a large sauce pan over medium high heat add the olive oil, onion and pepper. Saute for 5 minutes, remove from the pan and set aside. Add the ground chuck to the pan and season with the salt & pepper. Brown the meat until it’s cooked through, about 8 minutes. Drain the fat from the pan and add the onion mixture back in to the pan and stir to combine, reduce heat to medium.
  • While the ground chuck is browning, combine the following in a bowl: relish, vinegar, ketchup, brown sugar, mustard and BBQ sauce. Stir to combine and add it to the meat mixture. Stir to combine. Cook until heated through, 5-8 minutes. Serve on your favorite bun, I recommend a soft bun.

Notes

* Start with 2 tbsp. of apple cider vinegar, taste the Sloppy Joe's at that time and determine if you would like to add more. ** I prefer Sweet Baby Ray's BBQ Sauce because it is a thick BBQ Sauce and works well in this recipe.

Slow Cooker BBQ Beef

I am a huge fan of BBQ and this recipe for Slow Cooker BBQ Beef is one of my favorites.

First, this recipe is a slow cooker recipe and it makes the beef extremely tender. Second, there are two ingredients in this recipe that are not typical for BBQ and those ingredients are pickles and cocktail sauce and they add a unique flavor to the beef. Trust me, you will love it!

I eat the Slow Cooker BBQ Beef as is, but you can easily serve this dish as sandwiches or on top of mashed potatoes or polenta. You could also make a grilled cheese out of this or a quesadilla. The possibilities are endless.

Slow Cooker BBQ Beef

Slow Cooker BBQ Beef

Ingredients

  • 2 large onions, cut into thick slices
  • 3 cloves garlic, minced
  • 4 – 5 lbs. beef chuck roast
  • Salt & Pepper
  • 1 ½ cups chopped dill pickles
  • 1 – 12 ounce jar cocktail sauce
  • 2/3 cup ketchup
  • 3 tbsp. pickle juice
  • 1 cup thick BBQ Sauce

Instructions

  • Lay the onion slices in the bottom of your slow cooker.
  • Cut the chuck roast into 4 large pieces, cutting off some of the outer fat. Lay the meat on top of the onions in the slow cooker. Sprinkle the meat with salt and pepper.
  • In a small bowl, mix together the cocktail sauce, ketchup and pickle juice. Pour evenly over the meat in the slow cooker.
  • Turn the slow cooker on low and cook for 5-6 hours on low at which time you should remove the beef from the slow cooker and shred the meat with two forks on a cutting board and let rest.
  • Remove the onions and pickles from the slow cooker with a slotted spoon. Use a knife to chop the mixture into small pieces.
  • Add the BBQ sauce to the slow cooker and mix thoroughly with the juice that’s already in the slow cooker. Add in the meat and onion/pickle mixture, stir to combine. Put the cover back on and cook for another 30-60 minutes, until heated through and then it’s ready to be served.

New York Strip Steaks

I love a good steak, especially a steak grilled outdoors on a grill. In the dead of winter, in Wisconsin, going outside to grill is really not an option. The grill doesn’t stay hot enough because there is cold air gushing through it.

But, as I said I LOVE a good steak! So, when it’s winter out in Wisconsin one needs to improvise to get what one wants! I have come up with a way to grill a steak indoors and have it taste like you made it outdoors.

You start by heating up a grill pan on medium high and get it nice and hot. Then you slap on the steaks and get good grill marks on both sides of the steaks.

Then you finish the steak off in a 400 degree oven, this way the steak doesn’t become too tough like it would if you cook it completely on the grill pan.

Flavored butter in my opinion really takes the steak from a 4 Star to a 5 Star, it’s absolutely fabulous! If you haven’t tried this before, I suggest you try it real soon. Try one of my favorite butters.

Ingredients

  • New York Strip Steaks
  • Olive Oil
  • Salt
  • Pepper
  • Flavored Butter (optional)

Instructions

  • Preheat your oven to 350 degrees. Heat a grill pan over medium high heat.
  • Brush each side of the steaks with olive oil, then salt and pepper each side of the steak.
  • Once the grill pan is hot, add the steaks to the pan and reduce the heat to medium. Grill each side of the steak for 3 minutes.
  • Place the grill pan with the steaks on them in the oven. Use this guide to cook them to the temperature you prefer.
  • Medium Rare – 145 degrees (approx. 3 minutes)
  • Medium – 160 degrees (approx. 5 minutes)
  • Medium Well – 170 degrees (approx. 7 minutes)

Notes

Please note these cook times are based on the steaks I made which were about ¾ inch thick. Use a meat thermometer to get the desired doneness you prefer.

Italian Beef Sandwiches

Italian Beef Sandwiches, what can I say but YUM! So easy and packed full of deliciousness. You take a beef roast and add french onion soup, pepperoncini peppers and liquid and some zesty italian dressing and slow cook it for hours to make Italian Beef Sandwiches.

If you are not a lover of the pepperoncinis (like me), don’t let this stop you from making these Italian Beef Sandwiches. You can discard the peppers once the sandwiches are done.

The juice from the peppers make the sandwiches very juicy and give it a nice punch of flavor.

Italian Beef Sandwiches

Ingredients

  • 14.5 ounce can french onion soup
  • 3 lb. beef chuck roast, trimmed of visible fat and cut into large hunks
  • 1 envelope dry Zesty Italian salad dressing mix
  • 8 ounce jar pepperoncini peppers and half of the juice
  • Buns

Instructions

  • Pour the soup in the bottom of the slow cooker. Place chuck roast top of the soup and pour the salad dressing mix over the meat. Pour half the juice of the pepperoncini's over the meat. Add half of the jar of pepperoncini's to the mix. Cook on low for 7-8 hours.
  • Take the meat out and shred it with two forks. Add the meat back into the slow cooker and cook for an additional 30 minutes to 1 hour, until it's heated through.
  • Slice the buns and stuff them with the meat & pepper mixture. Enjoy!

Notes

You can use beef broth in place of the french onion soup. You can add cheese to the top of the sandwiches if you like.
