Cookie Dough Truffles

This No bake Cookie Dough Truffles recipe is filled with chocolate chip cookie dough and dipped in chocolate. The perfect treat for your sweetheart!

Who doesn’t love to eat chocolate chip cookie dough before the cookies are baked? I know I do. If you do also, you will love Cookie Dough Truffles! The added bonus is the cookie dough is dipped in chocolate, so you get a double dose of chocolate in this special treat.

With Valentine’s Day around the corner I wanted to post a treat that was simple enough for everyone to make for their sweetheart. I don’t know too many people that don’t like Chocolate Chip Cookies, so I think Cookie Dough Truffles would be a safe bet to make for someone special in your life.

I dipped Cookie Dough Truffles in Red Chocolate and Dark Chocolate and added red, pink and white sprinkles and red hots for added color and flair.

Who ever that special someone is in your life this Valentine’s Day, be it your husband/wife, boyfriend/girlfriend, son/daughter, etc., I hope your day is special.

Cookie Dough Truffles

Yield: 20 - 24 Truffles

Cookie Dough Truffles

Ingredients

  • 1 cup flour
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • 1 stick butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tsp. vanilla
  • 1/2 cup mini semi-sweet chocolate chips
  • 1 tbsp. water, if needed
  • Chocolate for melting
  • Sprinkles for decorating

Instructions

  • In a bowl whisk together the flour, salt, and cinnamon; set aside.
  • In a separate bowl, with a hand mixer, beat together the butter, sugar, brown sugar, and vanilla until combined. Slowly beat in the flour mixture until smooth. If the mixture seems dry, add in the water and mix together.
  • Stir in the chocolate chips. Roll the mixture into quarter size balls and lay on cookie sheet lined with wax paper. You should get approx. 20-24 balls. Chill in the freezer for 15 minutes or until firm.
  • Melt the chocolate in the microwave per directions on package (30 sec intervals, stirring in between). Gently dip the cookie dough ball into the candy coating. Once covered remove and let the excess chocolate fall off. Place back on wax paper. Top with sprinkles if you desire. Let the truffles rest so the chocolate can dry.

Salted Chocolate Truffles

Three kinds of chocolate are the base of Salted Chocolate Truffles that are topped with Fleur de sel and Chipotle Sea Salt to push this truffle over the top.

The base of Salted Chocolate Truffles consists of five ingredients; sweetened condensed milk, vanilla, dark chocolate, semi-sweet chocolate and milk chocolate. The use of three chocolates in really adds to the richness of this candy.

Adding sea salt to the top of chocolate candy like Salted Chocolate Truffles brings the flavors alive in your mouth. If you’ve never tried the combination I suggest you do, I promise you will love it!

I used a double boiler to melt the ingredients. This is a method of adding water to a pan and bringing the water to a simmer. Once the water is simmering you place a glass bowl on top of the pan with the ingredients inside and the heat from the simmering water melts the ingredients. Here is a link on using a double boiler.

This is definitely a recipe that is simple to make but looks like you spent all day in the kitchen making them! Salted Chocolate Truffles would make a great gift for someone special.

Yield: 3-4 dozen truffles

Salted Chocolate Truffles

Ingredients

  • 1 - 14 oz. can, sweetened condensed milk
  • 8 oz. bittersweet chocolate
  • 8 oz. semisweet chocolate
  • 1 tbsp. vanilla
  • 8 oz. milk chocolate
  • Chipotle Sea Salt and/pr Fleur de sel

Instructions

  • Heat the bottom pan of the double boiler over medium heat. When it comes to a simmer, add the glass bowl to the top of the double boiler and mix in the milk, bittersweet & semi-sweet chocolate and vanilla. Reduce heat to medium low and continue to stir until the mixture has melted completely. Take the bowl off the double boiler.
  • Cover the bowl with saran wrap making sure the saran wrap fits snug against the chocolate mixture. Refrigerate until chilled, 2 hours.
  • After the chocolate mixture has chilled, roll the mixture into balls. Put the balls into the fridge for 10 minutes to let the balls set.
  • While the balls are setting, reheat the water in your double boiler. Add in the milk chocolate and stir until fully melted. Dip each truffle into the melted chocolate and remove it with a fork.Tap the fork against the bowl to get rid of any excess chocolate. Place the truffle on a waxed lined baking sheet. Set the truffles in the fridge until the chocolate hardens. Store in an air tight container, in the fridge if it's humid in your home.

Chocolate Chip Granola Bars

Easy to follow and full of nutty and chocolate flavor, Chocolate Chip Granola Bars are sure to please everyone in your family!

This is my first attempt at making granola bars and I must say it was way easier than I anticipated. These are great to have on hand for breakfast or a quick snack. I think kid’s will fall in love with these. The best part is these are made in the microwave! Super simple!

These definitely are healthier than store bought granola bars because natural ingredients such as honey, maple syrup, oats and nuts are used to make these decadent granola bars.  No high fructose corn syrup or preservatives, that’s right, NONE.  That is what makes Chocolate Chip Granola Bars so special and delicious! Enjoy!

Chocolate Chip Granola Bars

Ingredients

  • 1/4 cup coconut oil, plus 1 tsp.
  • 1/3 cup packed light-brown sugar
  • 1/4 cup honey
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 2 cups oatmeal
  • 1 1/4 cups rice cereal
  • 1/4 cup pecans, chopped
  • 1/3 cup mini semi-sweet chocolate chips, plus 4 tbsp.

Instructions

  • Add coconut oil, brown sugar, honey and salt to a 2 quart microwave safe bowl. Heat for 1 minute on high power. Stir the mixture. Microwave for another 1 minute and 30 seconds on high power. Blend in vanilla and cinnamon, then add in the oatmeal, rice cereal and pecans. Mix to combine. Firmly press mixture into a baking sheet. Sprinkle 1/3 cup of mini chocolate chips and press into bars. Transfer to freezer and chill 10 minutes, then remove. Microwave 4 tbsp. of chocolate chips and 1 tsp. coconut oil on high for 30-40 seconds, drizzle this on top of the bars. Place back in freezer for 10 minutes, remove and cut bars. Store in an airtight container in the fridge.

Cinnamon Fudge Cake

Cinnamon Fudge Cake is a decadent, chocolate & cinnamon filled cake that comes alive in your mouth and it makes you want more!

I don’t normally pair chocolate and cinnamon together, but in this case it really works.  You bake this cake on a 9 x 12 baking sheet, so the cake to frosting ratio is perfect. I tend to like more frosting than cake, so this is the perfect cake for me.

When I bake goodies in my kitchen for my blog I tend to take some of the baked goods to work with me to share with my fellow co-workers. I will be honest with you, after my hubby Mr. B and I had a slice, it was evident that this cake would not be shared with my co-workers.

I will tell you that I microwaved my piece of cake for ab out 20 seconds and it helps to soften the frosting, and it is oh so perfect 🙂

Cinnamon Fudge Cake

Ingredients

  • For the cake:
  • ½ cup butter
  • ½ cup shortening
  • 5 tbsp. cocoa
  • 1 cup water
  • 2 cups flour
  • 2 cups sugar
  • ½ cup half & half
  • 2 tsp. vinegar
  • 2 eggs
  • 1 tsp. baking soda
  • 2 tsp. vanilla
  • 1 ½ tsp. cinnamon
  • For icing bring to boil:
  • ½ cup butter
  • 6 tbsp. half & half
  • 4 tbsp. cocoa
  • 4 cups powdered sugar
  • 1 tsp. vanilla

Instructions

  • Preheat the oven to 400 degrees.
  • In a saucepan combine the butter, shortening, cocoa and water and bring to a rapid boil. Remove from heat and let sit for 3 to 5 minutes. Add the mixture to your mixer. On low speed, gradually add the flour mixture and mix until combined.
  • Add the vanilla, cinnamon and half & half and mix for 1 minute. Add the eggs one at a time and mix until combined being mindful not to over mix.
  • Lightly grease a 9 x 12 baking sheet. Pour the batter in the pan. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • For the icing: combine the butter, half & half, cocoa to a saucepan and bring to a boil, whisking constantly. Whisk in the powdered sugar until well blended. Stir in the vanilla. Spread on the hot cake and spread evenly. It’s important to add the icing while the cake is still warm.
