Dill Pickle Dip

Let’s talk pickles, dill pickles to be exact. Are you a lover or hater? I am definitely a LOVER! Today’s Game Day Recipe is for Dill Pickle Dip and it is quite tasty.

Dill Pickle Dip combines cream cheese, sour cream, onion powder, worcestershire sauce, dill pickle juice and of course, dill pickles.

You let the dip rest for awhile and the flavors become fully blended and you have a scrumptious dip. Serve with potato chips or crackers. I would even be bold enough to say this dip wold be great with vegetables as well.

Dill Pickle Dip

Ingredients

  • 1 – 8 ounce package cream cheese, softened
  • ½ cup sour cream (I used light)
  • ½ tsp. onion powder
  • 1 tsp. Worcestershire sauce
  • 2 tbsp. dill pickle juice
  • 2/3 cup diced dill pickles
  • Potato Chips, Crackers or Vegetables

Instructions

  • Cream together the cream cheese and sour cream in a food processer. Add the onion powder, Worcestershire sauce and pickle juice and blend to combine. Add the dip to a bowl and stir in the dill pickles.
  • It’s best to let this dip sit for a couple of hours so the flavors blend. Garnish with some more chopped dill pickles if you like.
  • Serve with potato chips, crackers or vegetables.

Loaded Baked Potato Dip

I will be featuring some Game Day Food this week in honor of the Super Bowl coming up this Sunday. This Loaded Baked Potato Dip is loaded (pardon the pun) with lots of great flavors; sour cream, cheese, onion and bacon. What’s not to love, right?

Loaded Baked Potato Dip is best made ahead of time because the taste gets better the longer it sits. The obvious choice to serve this dip with is potato chips, but we all know chips are high in fat. I also serve this dip with carrots, celery or even tortilla chips.

You can easily use low fat or fat free sour cream and reduced fat cheese if you want to cut back on the fat content. And of course, when you are done frying your bacon place it on paper towel and blot off the fat. One tidbit, these steps will help cut back in fat and calorie content.

Ingredients

  • 1 (16 ounce) container sour cream
  • 2 cups cheddar cheese, shredded
  • 8 slices bacon, cooked and crumbled
  • 1/3 cup chives, diced or 6 green onions, sliced
  • salt, pepper and cayenne to taste (optional)

Instructions

  • Mix everything and enjoy scooping with potato chips.

Notes

This dip is even better when made a day ahead to give the flavors a chance to come out.

Light Queso Dip

I was so surprised when I posted a photo of this recipe on Facebook on Sunday before the Packer game and I had over 150 people view that post. If you are like me, when you saw the photo it made your mouth water and you had happy thoughts of dipping your own chip into the dip and enjoying it! Well, now you can enjoy because like I promised, here is the recipe.

This recipe comes together quickly. Chop the onions & peppers and saute. If  you like more heat, keep the membrane and/or seeds from the jalapeno. Add in some the liquids and spices and mix together.

Once the mixture is nice and bubbly and has thickened add in the tomatoes, juice and spices. Remove from the heat and add in the cheese and stir until cheese has melted.

Yield: 2 3/4 cups

Light Queso Dip

Ingredients

  • 1 cup skim milk
  • 3 tbsp. cornstarch
  • 2 tsp. olive oil oil
  • 1 medium onion, chopped small
  • 3 garlic cloves, minced
  • 1 poblano pepper, diced
  • 1-2 jalapeños, seeded and diced
  • 1/2 cup low sodium chicken broth
  • 10 oz can Rotel tomatoes diced with chiles, drained
  • 1/4 cup fresh cilantro, optional
  • juice of 1 lime
  • salt and black pepper, to taste
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 cup reduced fat sharp cheddar cheese, shredded

Instructions

  • In a small bowl, whisk together 1/4 cup of the milk with 3 tbsp. of cornstarch to create a thick sauce .
  • Heat a saucepan on medium heat; add the oil. Add the onions, garlic, poblano, and jalapeno and cook until soft, about 5-7 minutes.
  • Add the broth and the rest of the milk, bring mixture to a boil and add the cornstarch mixture, stir to combine. When the mixture starts to bubble and thicken, reduce heat to low and add in the tomatoes, lime juice and seasonings. Remove from heat and stir in the cheese. Serve immediately.
