Green Beans Wrapped in Bacon

Green Beans Wrapped in Bacon are cute little bundles of roasted green beans wrapped in bacon and basted with a tasty sauce.

Green beans are in abundance right now and I wanted to come up with a recipe that would be Dinner Party beautiful. Green Beans Wrapped in Bacon certainly is special enough to serve at a dinner party but are easy enough to make for a week night meal.

I used pepper crusted bacon in this recipe and it really added an additional level of flavor that I loved. I also used smaller green beans so they would roast at the same temperature and time as the bacon.

Serve the Green Beans Wrapped in Bacon along side some grilled chicken breasts, a burger or your favorite steak.

Green Beans Wrapped in Bacon

Green Beans Wrapped in Bacon

Ingredients

  • 1 lb. fresh green beans
  • 10-12 slices of bacon, I used black pepper crusted
  • 2 tbsp. butter
  • 1 tbsp. brown sugar
  • 2 cloves of garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  • Preheat your oven to 400 degrees. Spray a baking sheet with non-stick spray.
  • Wash and thoroughly dry green beans. Bundle together about 5-8 green beans, this will depend on your size of beans and the amount of beans you get for one pound. Wrap a slice of bacon around the bundle of green beans. Lay the bundle bacon seam side down on the baking sheet to hold it together. Repeat with remaining green beans.
  • Heat a small saucepan over low heat. Add butter, brown sugar, garlic, salt and pepper and whisk until melted and combined. Using a pastry brush, brush the mixture over top of each green bean bundle. Cover the bundles with foil and bake for 35 minutes. Remove foil and bake for 10-15 minutes more, just until bacon gets crispy.

Fiesta Fettuccine

Fiesta Fettuccine is vibrant with color from the peppers, corn and basil. Add to it some spices, pasta and cheese and you have a dish full of flavor.

I could eat pasta every day, really, I love it that much! I try to control the amount of pasta I eat, too many carbs to eat it every day. When I make a pasta dish I like to add in a fair amount of vegetables to off set the carbs. At least in my head I think I am eating healthier. 🙂

There are some wonderful spices in Fiesta Fettuccine, my favorites are paprika and cayenne pepper. These spices add some smokiness and heat to the dish. The cilantro and basil add a fresh element to the dish. Lastly,  I added bacon and cheese to the recipe because everything tastes better with bacon and cheese. I’m right, aren’t I?

Fiesta Fettuccine

Fiesta Fettuccine

Ingredients

  • 1 pound fettuccine pasta
  • 3 cups corn, fresh or frozen off the cob
  • 4 tbsp. butter, softened
  • 1 lime, juice of ½, ½ for garnish
  • ½ tsp. paprika
  • ½ tsp. chili powder
  • Pinch of cayenne pepper, more if you want it spicier
  • ¼ tsp. pepper
  • ½ tsp. salt
  • 1 sweet pepper, seeded and sliced into strips
  • ½ onion, sliced
  • ¾ cup milk
  • ¾ cup heavy cream
  • 1/3 cup parmesan cheese, grated
  • ½ cup sharp white cheddar cheese, shredded
  • 2 tbsp. parsley or cilantro
  • 1/2 cup fresh basil, chopped or julienned
  • 6 sliced bacon, cooked & crumbled
  • 1/2 cup queso fresco, crumbled

Instructions

  • Cook fettuccine according to package directions. Reserve 1 cup of the pasta water.
  • Add the corn to a microwave safe dish and heat for 2 minutes, set aside.
  • In a small bowl, mix together the butter, juice of a ½ a lime, paprika, chili powder, cayenne pepper, pepper and salt. Take ½ of the mixture and mix it in with the corn. Put the other half in a large sauce pan over medium high heat. Add the pepper and onion. Cook for 5-6 minutes, until they start to soften.
  • Stir in the milk and heavy cream. Cook for 5 minutes stirring often, until the mixture starts to thicken. Stir in the cup of pasta water.
  • Remove the pan from the heat and stir in the parmesan and cheddar cheeses. Stir to combine, return the pan to the heat. Add in the pasta, corn, parsley or cilantro, basil and bacon. Stir to combine.
  • Plate the pasta, garnish with queso fresco, a slice of lime and basil.

Copycat Starbuck’s Bacon & Gouda Sandwich

Copycat Starbuck’s Bacon & Gouda Sandwich is a toasted bun filled with eggs, crispy bacon and sharp gouda cheese.

My daughter Hailey worked at Starbuck’s for years, so naturally I visited the place often. I normally go for my latte and right now that would be a Triple Shot Venti Non-Fat Cinnamon Dolce Latte…..Yum!

I do enjoy a baked good once in awhile but usually I am there for the coffee drink. I will tell you when Starbuck’s came out with their breakfast sandwiches I tried and loved the Bacon Gouda Sandwich. I knew I would need to recreate this sandwich. Simple ingredients that equal a delicious sandwich.

I found my ciabatta rolls at Sams Cub of all places. And this is one of my money saving tips; buy an item in bulk, the cost will be less and you can do like I do, use half and freeze half for a later use. Enjoy!

Copycat Starbuck’s Bacon & Gouda Sandwich

Ingredients

  • 6 eggs
  • 1/4 cup half & half
  • Pinch of salt
  • Pinch of pepper
  • Butter for cooking the eggs
  • 8 slices of bacon, cooked
  • 4 slices of gouda cheese
  • 4 ciabatta rolls, toasted

Instructions

  • In a bowl, add the eggs, half & half, salt and pepper; whisk to combine. In the same pan, over medium heat, add a pat of butter. Add a circular mold to the pan. Holding down the mold, pour a 1/4 of the egg batter in the mold. Hold the mold for a few seconds so the batter doesn't sneak out the bottom; remove the mold. Once the egg is set, turn over and add a 1/4 cup of the cheese. Cover the pan and cook for 2 minutes or until the cheese is melted. Do this step 3 more times.
  • Set the eggs aside. In the same pan, add a pat of butter and place the buns cut side down and toast the buns until lightly browned.
  • To assemble the sandwich place the bottom of the bun on a plate. Top with the egg portion, top it with 2 slices of bacon. Add the top of the bun, cut in half and it's ready to eat!

Roasted Asparagus Salad with Strawberries

It’s definitely asparagus and strawberry season in my neck of the woods and oh how I love asparagus and strawberries! Roasted Asparagus Salad with Strawberries marries the two and the end result is a tasty salad that makes your mouth sing.

Roasted Asparagus Salad with Strawberries starts with roasted asparagus and is topped with strawberries, bacon, feta cheese and a home made honey balsamic vinaigrette. Simply delicious.

I served this at a dinner party and there was not one bite left. Rave reviews from everyone. I have put this on my list of recipes to make while we are vacationing in the Outer Banks.

For a quick fix I make Roasted Asparagus, click here for that recipe but I thought it was time to come up with a salad recipe using roasted asparagus.

Roasted Asparagus Salad with Strawberries

Roasted Asparagus Salad with Strawberries

Ingredients

  • 2 dozen asparagus spears
  • 1 tbsp. olive oil
  • ½ tsp. salt
  • ½ tsp. pepper
  • 6 slices bacon, chopped
  • 1 – 16 ounce container fresh strawberries, sliced
  • ½ cup crumbled feta cheese
  • 4 tbsp. honey balsamic vinegar
  • 2 tbsp. olive oil
  • 1 1/2 tbsp. Dijon mustard
  • 1/4 tsp. garlic powder

Instructions

  • Preheat the oven to 375 degrees.
  • Lay the asparagus out on a baking sheet, sprinkle with the olive oil and roll the asparagus around so they are all coated with the olive oil. Sprinkle with the salt and pepper. Bake for 10-12 minutes, until bright green in color.
  • While the asparagus are roasting, cook the chopped bacon over medium heat until brown and crispy. Transfer to a plate lined with paper towel and set aside.
  • When the asparagus are done roasting add them to a platter and top with the strawberries, bacon and feta cheese.
  • To make the vinaigrette:
  • Whisk together the vinegar, olive oil, mustard and garlic powder.
  • Pour the vinaigrette over the salad and serve.
