Mocha Truffle Cookies

December 13, 2013 by Kay Leave a Comment

Already up to Day 5 of the Twelve Days of Christmas Treats and coffee lover’s will rejoice with today’s treat…..Mocha Truffle Cookies.

These cookies are very decadent and easy to make. The mocha flavor really shines in this cookie, you can use an espresso powder or Starbuck’s Via instant coffee would work also, I used espresso powder from The Spice Crate. The addition of chocolate chips makes them double chocolaty (not really a word, is it?). I added red and green M&M’s to the top of some of the cookies to make them more festive for the holiday’s, but you could easily omit those if you wish.

As always, please comment or share this recipe with family and friends. Enjoy!

Molasses Cookies

December 12, 2013 by Kay Leave a Comment

Day 4 of the Twelve Days of Christmas Treats features Molasses Cookies. These are my hubby Bill’s favorite cookie. He told me last week he remembers making Molasses Cookies with his Mom, Lorna and sister, Kathy. Bill remembers Lorna shaping the cookie’s into a ball and rolling the cookie in sugar, then he or Kathy would “smash” the cookie to flatten it a bit with a glass before they were baked.

I love sharing Christmas memories and traditions. Do you have any special memories or traditions in your family? Maybe something that dates back to your childhood or a new tradition you have started? I would love to hear your answers, please leave a comment below.

Reindeer Chow

December 11, 2013 by Kay Leave a Comment

It’s Day 3 of The Twelve Days of Christmas and today’s recipe is Reindeer Chow. I love the name of this snack, I think kid’s will get a kick out of it. Pair this treat with a cup of hot chocolate!

This snack is filled with M&M’s, pretzels, Rice Chex, Cheerios and peanuts. On top of all of that is white chocolate and colorful cookie decorations. I truly enjoy pretzels dipped in white chocolate and you can find me making some kind of candy/snack with this combination in my kitchen at Christmas time.

  • In a very large bowl, mix together the Rice Chex, Cheerios, peanuts, pretzels and M&Ms.
  • In a saucepan, melt the white chocolate and coconut oil over low heat until melted, continually stir once it starts to melt.
  • Pour the melted chocolate over the dry ingredients and quickly toss together using two large spoons until everything is pretty evenly coated in the white chocolate. Spread the mixture out on the prepared pan and refrigerate until it's set, about 20 minutes. Break up any chunks and store in tins or airtight containers in the refrigerator for up to 4 weeks.

Turtles Candy

December 10, 2013 by Kay Leave a Comment

Welcome to Day 2 of the Twelve Days of Christmas Treats. Today I am featuring candy, Turtles to be exact. Any type of Turtle dessert is always delicious…..Turtle Cheesecake, Turtle Sundae, Cookies, Pie to name a few. The combination of chocolate, caramel and pecans is so satisfying.

Turtles seems to be a classic Christmas Candy. For as far back as I can remember, I remember Turtles on the candy dish this time of the year. I never liked the idea of making turtles, it seemed a bit time consuming, I then ran across this recipe. You bake the pecans and caramels at a low temperature and the caramels melt over the pecans, then you spoon melted chocolate over the top, that’s it!

If you are looking for a gift for someone on your list; a hostess gift, a co-worker, a neighbor for example, you may want to consider making these turtles. Enjoy!

Because you don’t make the caramels into a sauce, these are best served at room temperature.

Please take the time to share this recipe and comments are greatly appreciated.
