Buffalo Chex Mix

Buffalo Chex Mix is for the people who like a little kick in their mix!

My husband, Mr. B loves Chex Mix, pretty much anything salty and crunchy. When I asked him if he would like Buffalo Chex Mix his eyes lit up with a big YES! He is a fan of anything with buffalo sauce on it.

Mr. B’s mother, Lorna is the master at the Original Chex Mix.  There is no way I could even come close to making it the way she does, so I thought it would be better to come up with a different flavor Chex Mix. Thus, Buffalo Chex Mix was born.

This recipe for Buffalo Chex Mix has the most obvious ingredients of Chex Cereal, pretzels and nuts; the not so obvious ingredient is pita chips. They add another level of crunch to the mix. Baking it at a low temperature for a long period of time gives the sauce a chance to seep into the ingredients.

Buffalo Chex Mix

Buffalo Chex Mix

Ingredients

  • 4 Cups Corn Chex
  • 3 Cups Rice Ches
  • 3 Cups Pretzels
  • 2 Cups Seal Salt Pita Chips, I used Keebler
  • 1 cup cashews
  • 1 cup pecans
  • 1 ½ sticks of butter
  • ¾ cup hot sauce, I used Frank’s
  • 1 ½ tsp. Cajun seasoning

Instructions

  • Preheat the oven to 250 degrees.
  • In a large bowl, combine the Corn Chex, Rice Chex, pretzels, pita chips, cashews and pecans. Mix to combine and set aside.
  • In a small sauce pan over medium heat, melt the butter with the hot sauce and Cajun seasoning. Whisk until butter is melted, then pour over the mix. Stir to combine.
  • Top two baking sheets with foil and spray with cooking spray. Divide the mix evenly between the two baking sheets.
  • Bake for 1 hour, stirring every 15 minutes. When done baking, let the mix set in a cool place for 30 minutes. Store in an air tight container.

Tacoritos

Tacoritos are a combination of a taco, burrito and an enchilada and will easily become a family favorite recipe.

To continue with my week of recipes to make for Cinco de Mayo on May 5th I decided to feature my recipe for Tacoritos. This delicious Tex Mex recipe starts with a homemade enchilada sauce that uses chili powder and gives this dish a bit of a smoky flavor. The meat mixture is a combination of beef, beans and taco seasoning (here is my homemade recipe for taco seasoning).

To assemble these, you place some of the sauce on a flour tortilla, add some beef mixture, raw onions and cheese. Once all of the Tacoritos are assembled you pour sauce over the top and add some more cheese to take this recipe over the top because more cheese always takes a recipe over the top 🙂

The original recipe for Tacoritos calls for a combination of beef and sausage, you may use this combination if you like, either way they will be delicious.

Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 3 ½ cups water
  • 3 tablespoons chili powder
  • 1 teaspoon garlic salt
  • 1 ½ lbs. ground chuck
  • 1 cup refried beans
  • 1/4 cup chopped onion
  • 10 flour tortillas, warmed
  • 2-3 cups shredded Monterey Jack cheese

Instructions

  • Preheat the oven to 350 degrees.
  • In a saucepan over medium high heat, melt butter. Whisk in the flour and cook for 1 minute. Whisk in the flour and bring to a boil; let boil for a couple of minutes. Whisk in the chili powder and garlic salt. Reduce the heat and simmer uncovered for 10 minutes.
  • In a large skillet over medium heat, cook the ground chuck until meat is no longer pink. Drain the excess fat from the pan. Stir in the refried beans and heat through.
  • Spray a 9 x 13 baking dish with cooking spray. Spread a 1/3 cup of the sauce in the baking dish.
  • Spread 1 tablespoon sauce over each tortilla; place about a ¼ cup meat mixture towards the end of the tortilla. Top each with some onion and shredded cheese. Roll up and place seam side down in prepared dish.
  • Pour remaining sauce over the top; sprinkle with remaining cheese.
  • Bake, uncovered for 20 minutes or until bubbly and cheese is melted. Serve with sour cream, grape tomatoes and green onions if desired.

Notes

You may use a combination of beef and sausage in this recipe.

Paprika Garlic Corn

Paprika Garlic Corn is a super side dish packed full of corn, paprika, garlic salt and butter. The perfect addition to any meal.

As I’ve talked about before, my husband plants a large garden, really large. This summer I promise to take pictures of the garden so you can see what I am talking about. There is always plenty of sweet corn in the garden. There is no way we would be able to eat it all as it’s picked, so, we roast the corn, cut it off the cob and freeze it to use all year long.

When I went to my freezer the other day, I noticed I had way more corn than I remembered. I also needed to bring a vegetable to Easter dinner, so I was on a mission to come up with a tasty corn dish and I came up with Paprika Garlic Corn.

If you don’t have corn in your freezer from your garden, you can easily buy some frozen corn and it will work in this recipe. My family really liked this dish, you will too!

Paprika Garlic Corn

Paprika Garlic Corn

Ingredients

  • 4 cups or 2 - 16 oz. bags of frozen corn
  • 3 tbsp. butter
  • 1 tsp. paprika
  • 1 tsp. garlic salt

Instructions

  • Defrost the corn, this can be done in the microwave if you are short on time.
  • Once defrosted, strain the corn in a strainer and using some paper towel, press down on the top of the corn to drain the corn as much as possible.
  • In a pan, over medium heat, add the butter. Once the butter is melted, turn the up to medium high and add the corn. Toss to coat the corn in the butter. Add the paprika and garlic salt, stir to combine. Continue to heat on the stove for 3-5 minutes, until the corn is heated through.

Notes

You can easily cut this recipe in half or double if needed.

Parmesan Butter Rolls

Parmesan Butter Rolls are a quick and delicious recipe that uses refrigerated bread dough bathed in butter, cheese and spices.

Parmesan Butter Rolls are perfect for a quick addition to any week night meal, a pot luck or as an appetizer. I made them recently for a Confirmation Brunch and they were a big hit.

This recipe starts with cutting the refrigerated bread dough into 12 equal slices. You then place the slices into a muffin tin and brush the bread dough with melted butter then sprinkle with garlic salt, parmesan cheese and oregano.

Parmesan Butter Rolls are best served warm and can easily be doubled or tripled.

Yield: 12 Rolls

Parmesan Butter Rolls

Ingredients

  • 1 tube (11 ounces) refrigerated bread dough
  • 4 tbsp. butter, melted
  • Garlic Salt
  • Parmesan Cheese
  • Oregano

Instructions

  • Preheat oven to 375 degrees.
  • Remove the bread dough from it's wrapper and cut it into 12 equal pieces. Place the pieces into a muffin tin that has been sprayed with cooking spray.
  • Melt the butter and brush the top of each of the rolls. Sprinkle the rolls with garlic salt, parmesan cheese and oregano.
  • Bake the rolls for 13 - 16 minutes, until golden brown.
