Zucchini Cake with Brown Sugar Frosting

Super moist, very flavorful and extra sweet describe this cake made with fresh zucchini and no one will ever know there is a vegetable in Zucchini Cake with Brown Sugar Frosting (unless you tell them the name!).

The zucchini does really add a nice element to this cake and it’s a great way to use up any extra zucchini you might have left over from your CSA or your garden. Zucchini is also in abundance at Farmers Markets, so check there if you are in need of some for this recipe.

The key to this recipe is making sure to squeeze out some of the juice of the zucchini after you have shredded it, you don’t want the batter to be too thin.

Zucchini Cake with Brown Sugar Frosting

Ingredients

  • 3 eggs
  • 1 1/3 cups sugar
  • ½ cup vegetable oil
  • ½ cup orange juice
  • 1 tsp. vanilla
  • 2 ½ cups all-purpose flour
  • 2 tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 ½ cups shredded zucchini
  • CARAMEL FROSTING:
  • 1 cup packed brown sugar
  • ½ cup butter, 1 stick, but into small cubes
  • ¼ half & half
  • 1 tsp. vanilla
  • 1 ½ - 2 cups powdered sugar

Instructions

  • Preheat your oven to 350 degrees. Grease and flour a 9 x 13 metal baking pan.
  • In your mixer beat the eggs, sugar, oil, orange juice and vanilla.
  • In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda and salt. Slowly add the dry ingredients to the mixer and mix to combine. Add in the zucchini and mix just until combined.
  • Pour the mixture into the cake pan and use a spatula to even it out. Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Let the cake cool before frosting.
  • While the cake is baking make the frosting. Add the browns sugar, butter and half & half in a small saucepan. Over medium heat, let the mixture come to a boil. Boil for 2 minutes. Remove from the heat and whisk in the vanilla. Let the mixture cool to luke warm and whisk in the powdered sugar. Start with 1 ½ cups and check the consistency, if it isn’t thick enough, add in the additional ½ cup of powdered sugar, mix to combine. Frost the cake and serve.

Italian Sugar Cookies

Italian Sugar Cookies are tender morsels of delicious sugar cookies with a light glaze and pretty sprinkles added to the top.

These cookies pretty much melt in your mouth, they are so soft and sweet. Trust me when I say you won’t be able to eat just one.

I usually make these Italian Sugar Cookies Christmas but I thought this would be a nice Easter treat as well. Adding the bright colored sprinkles reminds me of spring colors. These would be great to bake with kids or grand kids, they can help decorate the cookies with their favorite sprinkles.

I used a 1 tablespoon cookie scoop to form the cookies and I baked them for 8 and a half minutes in my oven. They had just started to turn golden on the bottom of the cookie. You might notice some slight cracking on the top of the cookie, this is normal.

Italian Sugar Cookies

Yield: Approx. 3 dozen cookies

Italian Sugar Cookies

Ingredients

  • Cookies:
  • 3/4 cup shortening
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups King Arthur Unbleached All-Purpose Flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • Icing:
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract
  • 2-1/2 cups confectioners' sugar
  • Colored sprinkles

Instructions

  • Preheat the oven to 400 degrees. Line your baking sheets with parchment paper.
  • In your mixer cream together the shortening and sugar until light and fluffy. Beat in the vanilla and the eggs one at a time until fully incorporated.
  • In a separate bowl sift together the flour, baking powder and salt. Turn your mixer on low and add the flour mixture 1 cup at a time, turn the mixer up one speed and mix for a minute or two until well combined.
  • Using a 1 tablespoon cookie scoop form the cookies and place on the baking sheets or you can form the cookies by hand. Bake 8-10 minutes or until lightly browned. Remove to wire racks to cool.
  • For icing, in a small bowl, combine milk, butter, vanilla and powdered sugar until smooth. Dip the top of the cookie in the icing and sprinkle with colored sprinkles.

Butter Cream Frosting

Frosting is always better when the word butter is in the title. This is a soft and versatile  Butter Cream Frosting recipe that can be used on many different desserts.

This is a classic recipe that only has four ingredients in it and you can color or flavor this frosting to your liking. Perfect for cupcakes, cakes or as a filling. This will become your go to frosting recipe!

Ingredients

  • 1 cup – 2 sticks – unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tsp. clear vanilla
  • 3 tbsp. milk

Instructions

  • In a mixer, cream the butter for 2 minutes. Add in the powdered sugar, 1 cup at a time and mix to combine. Add in the vanilla and milk, mix to combine.
  • Check the consistency of the frosting, if it feels a little stiff, add in another tablespoon of milk and combine.
  • Makes approx. 2 ½ cups of frosting. Use to frost cupcakes or cakes or use as a filling.

Caramel Frosting

Caramel Frosting can be used for frosting many different recipes and it’s quick to make, using brown sugar, vanilla, half & half, butter and powdered sugar.

I initially made this recipe to frost my Zucchini Muffins but it can easily be used to frost cupcakes, cakes or donuts. It’s a very versatile frosting. I will be honest, I could eat JUST the frosting, I don’t really need something to put the Caramel Frosting on.

Ingredients

  • 1 cup packed brown sugar
  • ½ cup butter
  • ¼ cup half and half
  • 1 tsp. vanilla extract
  • 2 cups powdered sugar

Instructions

  • In a sauce pan combine brown sugar, butter and half and half; bring to a boil over medium heat. Continue to boil and whisk for 2 minutes. Remove the pan from the heat and add in the vanilla. Let the mixture cool for 10 – 15 minutes. Whisk in the powdered sugar. Let cool for 5 more minutes and you are ready to use the frosting.
