Honey Pound Cake

Honey Pound Cake is super dense and super sweet with the taste of honey.

Fresh berries are so in season right now and I thought I would share a pound cake recipe to serve with your fresh berries. I usually make a cream cheese pound cake. I ran across a recipe that uses honey and I thought that would be so delicious with fresh berries.

I am amazed how much the honey flavor comes through in this recipe. I recommend using a local home grown honey, it really will make a difference in this recipe. I used a honey made in Minnesota, AMES. I bought it at the Minneapolis Farmers Market. When ever I visit my daughter, Kiley we always make a stop at the farmers market, it is fabulous!

Here is a tidbit, from spring to fall most areas have a farmers market. I suggest visiting and supporting local farmers. You will get fresh produce and you are buying local. It’s also nice to talk to the farmers and ask for suggestions or find out more about their farm. I firmly believe in buying local, it keeps the local economy thriving.

Honey Pound Cake

Honey Pound Cake

Ingredients

  • 1 cup butter, softened
  • 1 1/3 cup sugar
  • ¼ cup honey, local honey if possible
  • 5 large eggs
  • 2 tsp. vanilla
  • 1¾ cup flour, sifted
  • 1 tsp. baking powder
  • ½ tsp. salt

Instructions

  • Preheat oven to 325 degrees. Line a 9 x 5 inch loaf pan with parchment paper (see my photo) and spray with cooking spray.
  • In your mixer, beat the butter, sugar, and honey together for 2-3 minutes.
  • Beat in the eggs, one at a time, making sure they are fully incorporated before adding another egg. Add the vanilla and mix to combine.
  • Sift together the flour, baking powder and salt. Add 1/3 of the dry mixture and mix to incorporate, repeat this step 2 more times.
  • Add the batter to your prepared pan. Bake for 1 hour to 1 hour and 20 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • Cool the cake for 15 minutes before removing from the pan. To remove, take a knife and go around the perimeter of the pan to loosen the cake, make sure to go on the outside of the parchment paper. Take hold of the 2 side of the parchment paper with 2 hands and life the cake up and set on a cutting board to finish cooling.

Chocolate Chip Granola Bars

Easy to follow and full of nutty and chocolate flavor, Chocolate Chip Granola Bars are sure to please everyone in your family!

This is my first attempt at making granola bars and I must say it was way easier than I anticipated. These are great to have on hand for breakfast or a quick snack. I think kid’s will fall in love with these. The best part is these are made in the microwave! Super simple!

These definitely are healthier than store bought granola bars because natural ingredients such as honey, maple syrup, oats and nuts are used to make these decadent granola bars.  No high fructose corn syrup or preservatives, that’s right, NONE.  That is what makes Chocolate Chip Granola Bars so special and delicious! Enjoy!

Chocolate Chip Granola Bars

Yield: 16 Squares

Chocolate Chip Granola Bars

Ingredients

  • 1/4 cup coconut oil, plus 1 tsp.
  • 1/3 cup packed light-brown sugar
  • 1/4 cup honey
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 2 cups oatmeal
  • 1 1/4 cups rice cereal
  • 1/4 cup pecans, chopped
  • 1/3 cup mini semi-sweet chocolate chips, plus 4 tbsp.

Instructions

  • Add coconut oil, brown sugar, honey and salt to a 2 quart microwave safe bowl. Heat for 1 minute on high power. Stir the mixture. Microwave for another 1 minute and 30 seconds on high power. Blend in vanilla and cinnamon, then add in the oatmeal, rice cereal and pecans. Mix to combine. Firmly press mixture into a baking sheet. Sprinkle 1/3 cup of mini chocolate chips and press into bars. Transfer to freezer and chill 10 minutes, then remove. Microwave 4 tbsp. of chocolate chips and 1 tsp. coconut oil on high for 30-40 seconds, drizzle this on top of the bars. Place back in freezer for 10 minutes, remove and cut bars. Store in an airtight container in the fridge.

Honey Lime Fruit Kebabs

Honey Lime Fruit Kebabs will become a fast favorite for kids and adults alike. The perfect way to incorporate more fruit into your day.

Hey Everybody! Happy Hump Day!

My idea for posting this recipe today is two fold. First, it’s a great way to involve kids in helping in the kitchen and second, Honey Lime Fruit Kebabs would be a great addition to a Mother’s Day Breakfast or Brunch. Even better, let the kids make the Honey Lime Fruit Kebabs for Mom, she will love it!

I will admit, I don’t get enough fruit in my daily diet. Honey Lime Fruit Kebabs really make me want to eat more fruit. I like the combination of fruit and the honey lime glaze is just down right delicious.

Yield: 12 to 15 Skewers

Honey Lime Fruit Kebabs

Ingredients

  • 1 pint strawberries
  • 1 pineapple, peeled and cored
  • 1 lb. grapes
  • Wooden skewers
  • 3 tbsp. honey
  • 2 small or 1 large lime
  • ½ tsp. poppy seeds

Instructions

  • Wash the strawberries and cut the tops off. If the strawberries are very large, cut them in half, otherwise leave them whole.
  • Cut the pineapple into large chunks.
  • Wash the grapes and remove them from the stems.
  • Take the wooden skewers and line them with the fresh fruit, in any order you like. Set the skewers aside.
  • In a bowl, add the honey, the zest of the limes, the juice of the limes and the poppy seeds. Stir to combine.
  • Drizzle the honey mixture over the fruit kebabs and serve.

Honey Balsamic BBQ Sauce

Balsamic vinegar is cooked down to a thick syrup and is added to honey, barbeque sauce and brown sugar to become a flavorful sauce that can be used on meatballs, chicken or pork chops.

This sauce has a lot of complex layers that come alive in your mouth. If you are looking for a kicked up BBQ sauce, try Honey Balsamic BBQ Sauce, you won’t be disappointed.

I love this sauce on my recipe for Herb Meatballs.

Ingredients

  • 1 cup balsamic vinegar
  • ½ cup honey
  • ¼ cup brown sugar
  • 1 bottle BBQ Sauce

Instructions

  • Add the balsamic vinegar and agave to a sauce pan over medium heat and bring the mixture to a boil. Reduce the heat to medium low and cook on a low boil for 35 minutes. Add in the brown sugar and bbq sauce and heat through for 10 minutes. Pour the sauce over the meatballs. At this point you can serve them now or you can add them to a slow cooker and keep warm over low heat.
