Cookie Dough Brownies

Cookie Dough Brownies starts with a fudge brownie and then is topped with a cookie dough layer and to make them even better, another layer of chocolate.

As promised in my post for Chocolate Chip Brownies, here is the recipe for Cookie Dough Brownies. This is the perfect recipe to dress up a brownie, not that a brownie needs to be dressed up, but once in awhile it’s nice to have a more decadent brownie, and this is it. I have made these multiple times for bake sales and they are always a hit. So, the next time you make brownies, take the extra few minutes and make this recipe, you won’t be disappointed.

Cookie Dough Brownies

Cookie Dough Brownies

Ingredients

  • 1 batch of Chocolate Chip Brownies
  • 1 stick of butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 2 tbsp. milk
  • 1 tsp. vanilla
  • 1 cup flour
  • 1 tbsp. shortening
  • 1/2 cup chocolate chips

Instructions

  • In a bowl add the butter, brown sugar and sugar; mix to combine. Add in the milk, vanilla and flour; mix to combine. Spread this mixture on top of the pan of brownies.
  • In a microwavable bowl, add the shortening and chocolate chips. Microwave for 30 seconds, stir to combine. If not completely melted, microwave for an additional 15 to 30 seconds. Stir to combine. Spread the chocolate mixture on top of the cookie dough layer. Place the pan in the fridge until chocolate layer has set.

Chocolate Chip Brownies

Homemade brownies with chocolate chips, every bite is a happy dance in your mouth. This recipe whips up quickly, within an hour you can be eating warm brownies. Top the brownie with a scoop of ice cream, whipped cream or caramel sauce to make them even more decadent.

I will tell you that this these Chocolate Chip Brownies are the base for the recipe I will share with you tomorrow, Cookie Dough Brownies. So, now you need to make the decision, do I just make the Chocolate Chip Brownies and devour them now or do I wait until tomorrow and get the recipe for Cookie Dough Brownies? It’s a tough decision, I know. Either way you won’t be disappointed.

Chocolate Chip Brownies

Ingredients

  • ¾ cup butter
  • 1 ½ cups sugar
  • 1 ½ tsp. vanilla
  • 3 eggs
  • ¾ cup flour
  • ½ cup cocoa
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees. Line a 9 x 13 pan with parchment paper (this is optional), either spray the parchment paper or the pan directly and set aside.
  • Melt the butter. In a mixer combine the melted butter, sugar and vanilla. Add the eggs in one at a time, making sure to incorporate each one before adding another.
  • In a separate bowl whisk together the flour, cocoa, baking powder and salt. Slowly add the dry ingredients in with the wet and mix until combined. Add the chocolate chips and mix to combine. Be careful not to over mix.
  • Pour the batter into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted comes out clean.

Notes

You could switch up this recipe and use white chocolate or butterscotch chips in place of the chocolate chips.

Broccoli Cheese Soup

Broccoli, carrots, chicken broth, half & half and lots of cheddar cheese come together to make this delicious soup.

This recipe starts with a classic roux, a mix of butter and flour, that is used to thicken the soup. The half & half and chicken stock help to make the soup creamy. Broccoli and carrots add a good portion of vegetables while the cheddar cheese gives this soup the added amount of zing to make this soup sing.

 

Serve it up with a piece of crusty bread and call it a meal.

Broccoli Cheese Soup

Ingredients

  • ¼ cup butter
  • 2 medium onions, chopped
  • 1/3 cup flour
  • 1 ½ cups half and half
  • 6 cups chicken stock
  • 3 cups carrots, sliced thin
  • 6 cup broccoli, chopped, use the florets and stalks sliced thin
  • 2 cups sharp cheddar cheese, shredded
  • Salt & Pepper to taste

Instructions

  • In a large saucepan, melt the butter over medium heat and add the onions, cook for 10 minutes. Add the flour and stir to combine, cook for an additional 3 minutes. Slowly whisk in the chicken broth, making sure the onion roux is mixed in. Add in the half and half and stir to combine. Bring to a boil and add in the carrots and broccoli. Bring mixture back to a boil and reduce to low and cook for 20 minutes, or until the carrots are soft.
  • Take the pan off the heat and put ¼ of the mixture into a blender or food processor, pulse until smooth. Continue processing the rest of the batches and return the soup to the stove. On medium heat, bring the soup back up to a warm temperature (almost to a boil) and stir in the shredded cheese, stir to combine. When the soup is heated through and the cheese is melted, it is ready to serve. Add salt and pepper to taste.

Flavored Butters

I am a big fan of flavored butters. Slap some butter in a bowl and add in your favorite flavors and it can bring a dish to life. My favorite way to use a flavored butter is on a steak but they work well on chicken, fish, breads and vegetables to name a few.

Here is a list of some different variations of flavored butters:

Garlic Butter

  • 1/2 cup butter
  • 4 cloves peeled garlic, minced fine
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh lemon juice (optional)
  • Salt to taste

Horseradish Butter

  • 3/4 cup butter
  • 2 tablespoons of bottled horseradish, drained
  • 2 tablespoons minced fresh chives (optional)

Italian Herbs Butter

  • 1/2 cup butter
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh oregano
  • 1 tsp. garlic salt

Smoky Tomato Butter

  • 1/3 cup unsalted butter, softened
  • 1/2 teaspoon tomato paste
  • 1/4 teaspoon smoked paprika
  • Sea salt and freshly ground pepper to taste

Blue Cheese Butter

  • ¼ cup butter or margarine, softened
  • ¼ cup crumbled blue cheese (1 oz.)
  • 2 tsp. chopped fresh chives, optional
